I agree with other posters, but I also cheat by adding a teaspoon of baking powder. You need to sift the flour too.

Everyone compliments me on me well-risen cakes. Hee- hee!:j

Weird:confused: -I've just put the words 'victoria sponge' in the search box and it came up with at least 6 threads entitled 'victoria sponge'.

Even weirder - I tried victoria sponge in the forum search box and it only came up with this thread at the top. There were no other mentions shown in the thread titles.

I have never found what I'm looking for using search and finding the index can be difficult too.

Strange  Have you got 'show threads' or 'show posts' selected when you use the search box?

I use 8oz butter, 8oz sugar, 4 lg eggs, 7oz self raising flour, 1oz cornflour, 1 tsp baking powder, 3 tbsp milk.

    180 C/Gas mark 4 for 25 mins.

The good thing about this one is I whack it all in the food processor (no sieving neccessary!) and mix till smooth and I have never had a disaster with it and the cornflour keeps it light.
