I agree with other posters, but I also cheat by adding a teaspoon of baking powder. You need to sift the flour too.
Everyone compliments me on me well-risen cakes. Hee- hee!:jMember #14 of SKI-ers club

-I've just put the words 'victoria sponge' in the search box and it came up with at least 6 threads entitled 'victoria sponge'.
Even weirder - I tried victoria sponge in the forum search box and it only came up with this thread at the top. There were no other mentions shown in the thread titles.
I have never found what I'm looking for using search and finding the index can be difficult too.0 -

Well, I don't know
it always behaves itself for me lol-most peculiar. 0 -
I use 8oz butter, 8oz sugar, 4 lg eggs, 7oz self raising flour, 1oz cornflour, 1 tsp baking powder, 3 tbsp milk.
180 C/Gas mark 4 for 25 mins.
The good thing about this one is I whack it all in the food processor (no sieving neccessary!) and mix till smooth and I have never had a disaster with it and the cornflour keeps it light.0
