I put my home made soup into glass jam jars and then, once cooled, put the lid back on and then put in the freezer.

These hold a good amount for one person. I take one to work and then just pop in the microwave for lunch (when it's usually partially defrosted).

If you pop your sandwich bag into a mug first and then fill em up with soup you get your perfect portion size in a bag...it'll freeze fine in a bag and take up less space in your freezer than a box!!

You can freeze soup quite successfully in sandwich bags as long as they are good quality bags. put them into a large container already filled. When you take them out put it into a jar or small plastic box to defrost on your way to work just incase the bag splits. Personally i wouldnt freeze them in glass because of the extreme temperature. Friend of mine brings them to work everyday and they smell delicious after being microwaved
make the most of it, we are only here for the weekend.
and we will never, ever return.

I use the small, plastic 1 pint milk cartons. These fit easily in the fridge at work for two days lunches with HM bread, mmmm yummy.

Carrot and coriander soup. Slice finely one onion and dry fry in a large saucepan for 5 mins until soft. roughly slice 1kg of carrots and make 1.2 litres veggie stock, add stock and carrots to saucepan with a handful of roughlt chopped coriannder or some dried coriander. bring to boil and simmer for about 20mins or until carrott soft. put in liquidiser or use hand blender to get desired consistency, i sometimes add more stock at this point and seasoning sometimes some more coriander depends on personal choice!!
    Hope that helps

A teaspoon of curry powder in a large pan of soup, instead of coriander, is nice if you want to vary the carrot soup.

Great idea about the sandwich bags in a mug.

  • I bought some of those old-fashioned soup mugs (with the recipe on the side, very kitsch) from the charity shop for 50p each and fill them with soup. I cover them with cling film and freeze. Then I take them to work, still frozen so that they don't spill, and by lunch time they are defrosting. I just bung them in the microwave.
