    Hey - ive just moved into a new home after living in a homeless shelter for 6 months with my son - Iam saving up for carpets furniture ect as I had nothing when I moved in, Ive been given a microwave and as yet dont have any other means of cooking food for me and my son. - I love feeding him homecooked healthy and (MSE) recipies - Ive got so many idea's off you all in the last few years!

    So the question is - what can i cook for me and him in the microwave? Its gotta be cheap, nutritious and tasty!

    I haven't cooked per se much in the microwave, but friend recently showed me how to do scrambled eggs in the microwave... (and they can be very cheap and recent report says eggs are new superfood).

    You put it in the dish, stir it well and then keep putting it on for 15-20 secs each time before stirring it again and putting it back again.. repeat until it has the right consistency.

    There's a 3min. pudding by microwave.It is easy and OK. not exactly healthy but homemade!

    one of my favourite healthy dishes is bulgur wheat with an olive oil and lemon juice dressing. i put fresh corriander, mint and parsley in it, with chopped garlic, cherry tomatoes, spring onion, olives, cucumber.

    you can easily cook bulgur (and rice) in the microwave and then you add the fresh ingredients to it when its just warm. then you have a base to serve with other tasty things, like i put feta cheese in it, or bits of bacon, chicken etc. avocado goes really well with this

    You can very quickly and easily do all your vegetables in a microwave.

    You just need one or two small casserole dishes, put the veg in with a VERY SMALL amount of hot water from the kettle and place in MW with lid on, most things will cook within about 5 mins by a combination of the microwaves and the steam from the water. It is also very easy to add flavours through putting some herbs or spices in the casserole with the veg and water.

    It's quick and retains the nutrients and flavours. Once done drain the small amount of water, add butter or olive oil if you wish, and serve!

    Jacket potatoes are an obvious one for the microwave :) and microwaved cakes always go down well especially with custard!

    Almost everything! I find most things can be done in the microwave with a few extra precautions/alterations:
    When boiling foods you have to keep an eye on it incase it bubbles over and perhaps use a lower power setting. When doing veg I sometimes stop and start the microwave, cooking for 2 mins, leave for a few mins, boil for 1 min etc.
    Stir eggs regularly and cook them on low to stop explosions.
    Cut meats up into smaller pieces to make them cook more evenly, go for low fat meats too as they're less messy.
    Steam puddings are very tasty in the microwave, you can make a small one with a mix of: 1 egg, 2oz SR flour, 2oz marge, 2oz sugar tblsp milk; put a spoon of jam/syrup at the base of a deep bowl, top with mix, cover with cling film and microwave for 2-3 mins.
