  • UNfortunately the 5th attempt was as much of a disaster as the 4th! :o I think I'll buy a hand blender, and maybe try it again at some point when there's not so much pressure on me!

    Does anyone know if i can make meringues using granutlated suger. i always use caster, but i have none ( shopping day tomoz) and i've got cream and eggs to use so thoguht a fresh fruit pavavola would be yummy.

    if not , any other suggestions ?

    Hello, all.

    A question for someone who's good at substitution baking....

    Just what the title says, really, can I use honey instead of sugar in meringues? Don't want to waste the eggs if it's not going to whisk up the same.

    Thanks for your reply, ragz.

    Since I posted this, I've done a lot of googling. Found a couple of recipes for honey meringue, but they seem to use a heck of a lot of honey - one says 2 cups honey to 4 egg whites, and that one cup is twelve ounces!

    Maybe I'll experiment with one egg white plus honey - I can always turn it into biscuits if it is an abysmal failure and doesn't fluff up into peaks.
