pastry
12 oz plain flour
2 egg yolks
4 oz lard
170ml water
filling
1 and 1/4 1b pork shoulder cubed . i,ve used whoopsie shoulder steaks
4 rashers bacon chopped
1 chopped onion
1/2 chopped celery stick
pinch thyme
4 oz breadcrumbs
1 egg beaten
make pastry
put flour in bowl make a well add egg yolks cover with flour
put lard in a pan with water to gently melt bring to boil and pour into flour
mix quickly to make a dough leave aside
MAKE FILLING
chop up pork quite small can use processor i just use a knife
add all other ingredients stir through till combined
grease 7 inch loose bottomed tin
divide pastry in to 2/3rds for bottom 1/3rd for top
roll out on grease proof paper to save it sticking to work surface
line tin with pastry doesnt matter if it breaks up as easily patched back together
put in filling press down well
cover with pastry lid and seal edges "pinching" pastry together
make a 2cm hole in top
can glaze with some beaten egg and decorate with pastry leftovers
bake 210 c 45 mins
reduce heat to 180 c for an hour cool in tin
note if browning too much cover with foil
once cool you can fill with aspic jelly if you wish
i use 4 fl oz apple juice
1/4 chicken stock cube
2 tsp gelatine dissolve all together over gentle heat and once gelatine dissolved pour a little at a time through opastry hole

Getting hungry reading this thread!
We usually have cold meat, pickles, salad, crisps and dips plus tiny sausage rolls etc. along with dessert, which might be just mince pies and christmas cake but more often a cheesecake or trifle as well. One thing I do like at Christmas is a big bowl of fresh fruit, lots of different kinds; its a bit of a counterbalance to so much rich food... don't throw the string away. You always need string!

Hi There,
We always have what we call pickies for Christmas Tea, we eat
between 2-3pm and come evening all we want is a pick. Just a finger
buffet as others have suggested should be enough.
And please remember this is your Christmas too, so don't stress too
much and enjoy yourself.

We do a normal size dinner and then at night we do a big buffet tea, or as my kids call it party tea. I do sandwiches, sausages rolls, mini quiche, pork pies, nibbles and dips, pringles, my daughters favourite which is chesse and pineapple, then trifle, little cakes and choc gateux.
