I don't blanch but just put the florets into a bag and freeze. They don't stick together so I don't see the need to do anything else

I was reading a thread on here about someone spending a couple of hours chopping up vegetables and then freezing them straight away, so I presume it is dafe to do so ... however I was wondering if you can do the same for fresh veg? Just been shopping bought a big bag or carrots, big bag of parsnips could i prepare these and then freeze once prepared (i.e chopped etc) If so do I need to defrost them before use or can I cook directly from frozen? Carrots/cauli/broccolli is always steamed and parsnips I roast.

I don't know about carrots and parsnips etc but i chop onions and peppers and freeze them in bags or tubs so they are reday to chuck into a stir fry. I just put them in frozen and they seem fine.
I'd like to know about carrots etc too!0 -

I usually par boil my parsnips and then freeze - they roast straight from frozen. With carrots I usually par boil and then roast in honey from frozen.0

I chop and freeze onions raw - but usually bag them up into roughly 1 onion sizes as I got sick of trying to bash bits off
Just cook straight from frozen.
I think someone recently mentioned you can freeze raw cooked carrots but I usually par boil them because I always seem to underestimate how long they take to cook and end up with crunchy carrotsworking on clearing the clutterDo I want the stuff or the space?0 -
I parboil spuds ready for roasting too
And I freeze chopped raw peppers ready to add to stirfry etc (but they do go a little soft this way so don't do it if you want the crunch)working on clearing the clutterDo I want the stuff or the space?0 -
Don't hand chop your onions, use a food processor, the no tears method;)
I freeze every type of fresh veg (cheaper to buy in bulk)but in my experiance cauli and broccolli tend to hold more water than other veg so can become a bit soggy when re-cooked. Some people advise you to blance the veg first but I don't bother, just chop it up in portions, whang it in a bag and freeze. As a general rule I go by, if they can buy it frozen you can freeze it yourself:D

I freeze my onions and peppers raw... but it is true that they can go a bit soft when cooked, but i don't mind that...:D0
