It has just got to be smoked salmon, and soft cheese.

Lay the salmon out , spread with philly , roll up and cut into bite size pieces..... Serve with freshly buttered wholemeal bread , watercress, and a lemon wedge ... perfect

similar to mandi's but add a large prawn to each portion sized piece and wrap the smoked salmon and cream cheese around it, serve two or three on a bed of lettuce or watercress, with a smidgeon of hot chilli dip - heaven!

Small portion of sliced Feta cheese, sliced tomatoes and sliced cucumber, drizzled with olive oil, vinegar, pepper and one small slice of warmed french bread (you could slice a roll instead)

I did smoked mackerel pate with toast last year and it was really nice.

Some good ideas here, Im struggling to think of something Quick and easy. It seams as if most people enjoy Smoked Salmon, Prawns, and feta cheeese.
