I'm planning to make my own chilli con carne tonight without jars!
can anyone point me in the right direction for a recipe for the chilli sauce? I know its here somewhere but for the life of me can't find it - feel free to remove this thread once i get the link!
Thanks everyone - Ive turned into a right little Delia after reading the threads on this board - a few weeks ago I'd have bunged in a jar of ready made sauce without even thinking about it, so far i've tried several of the recipes from here with much success!!

There is at least one thread I recall. My tip is the spice cumin (buy seeds ~60p/packet, dry roast and grind with a pestle and mortar) and fresh chillies not powder (with the appropriate care taken when handling obviously). Other than that it's just a tin or two of tomatoes cooked with whatever you like and seasoned.

Its too late for tonights tea, but this is my recipe for chilli con carne and I just love it and make it all the time!

oh a chilli recipe thread, great
... here's mine
1lb mince
8oz onion, peeled & chopped
1 Tablespoon garlic, peeled & finely chopped
1-2 teaspoons chilli powder
1 teaspoon dried oregano
1 teaspoon ground cummin
1 green pepper, diced
2 Tablespoons tomato puree
14 oz tin tomatoes, crushed
1 Tablespoon dark soy sauce (or a stock cube)
salt & pepper
1 teaspoon sugar
6 oz dried pinto beans soaked overnight
dry fry meat till browned in a well-seasoned or non-stick pan, stirring & breaking up lumps
add garlic & onion, stir fry 5 minutes
add all other ingredients except green pepper, bring to boil & simmer till beans are just done, topping up with water if necessary
add pepper & cook another half hour or till beans are soft
check seasoning & serve with rice & sweetcorn, or corn chips & grated cheese, top a HM pizza base with it, or use in chilli dogs or chilli nachos etc
you can use red kidney beans instead of the the pintos, but if you're using the dried ones remember to boil, not simmer, them for at least 10 minutes at the start of the cooking to destroy the toxins they contain
don't be tempted to leave out the cummin & oregano, it makes all the difference to the taste of the finished dish0 -

I made it exactly like that today, but with fresh chilli's. I've got a stinking cold, so it was pretty hot, trying to kill the bugs!!:j0
