In the past I have frozen the dough and then once defrosted made the gnocchi, adding a little more flour if it got pappy, but I have never actually frozen made up gnocchi.
I suppose if you freeze them flat on a baking sheet and then put them in a bag once they are frozen solid, they might be ok - my only concern would be the stickiness as they defrost. Good luck if you try, let us know the results of the experiment!

You can definitely freeze them on a tray and then put them in a bag! My Italian sister in law taught me to make gnocchi, and recommended freezing them this way before cooking them as it makes them come out fluffier.0 -
Just spent a while making not-so-dainty gnocchi (kilo of potatoes + some flour). They look a bit like baby dumplings
and I have rather a lot, two meals worth I'd think
As I've gone to the effort, I wonder if my planned tomato sauce accompaniment will do them justice?

if i was to freeze the gnocchi would I need to defrost it before cooking or could it be cooked from frozen?Expecting Baby No 1 - 20/06/14 - Team Yellow!0

Not sure but you could experiment with one or two in advance, boil the water and cook them from frozen, if it works, BINGO, if not, defrost!

Cook from frozen.....they only take a minute or so longer than fresh.0 -
I got a lovely idea from a magazine a while back, basically a slow cooked bolognese / ragu sauce using stewing steak rather than mince and a few chunky veggies (carrots or whatever), which you put in an ovenproof dish, layer on top some cooked gnocchi, sprinkle on some cheese and whack it under the grill until the cheese is bubbling. It was yum! I must do it again.Mortgage
