5 sheets filo pastry
oil spray
100g fat-free mincemeat (see recipe)
125g cooking apples, grated
225g mixed dried fruit
1/2 tsp mixed spice

150ml sweet cider

low calorie oil spray
to make the mincemeat, place all the ingredients in a small saucepan and simmer for 10 minutes. Leave to cool, then pack into sterilised jars and refrigerate for up to 1 month:eek:
Preheat the oven to 190c 375F, gas mark 5, stack the filo pastry sheets on top of each other and using scissors, cut into 30 squares.
Very lightly grease a non stick 6-section mould with oil spray. Put 3 squares, in each section, placing them at slight angles to each other and spraying each square with a fine mist of oil.
Divide 100g mincemeat between the 6 pastry cases, then place 2 more filo squares on top of each one. Bake in the centre of the oven for 10-15 mins until crisp.

it's been alright actually, not what we all planned but hey ho!
as brownie weekend was cancelled it kinda screwed everything up.... bloody snow!!!!!
on friday night erin and i had our miracle on 34th street evening... then on saturday she went to swimming class, and spent the rest of the day out in the snow and then a few warm cosy hours indoors playing with a friend (so nice to see, even though will probably never see the kid again!!)
we all went out for our chinese meal on sat night. it was alright, food was good, company was pants! and we managed to have a blazing row before we went... even better it was the kinda row that involved erin too, and it wasn't pretty even though it was petty as hell!
today has been another snowy day, erin had craft class and made xmas decorations... i managed to go for a 2 mile walk today while she was in class and spoke on the phone to our sally!! which was lovely!
and tonight has been quiet, watching some thing about a flu epidemic on bbc....
