I use the buttermilk for scones and soda bread, and if I am not having any that day/ week, it freezes well. I also tend to use the Kenwood if I can as it doesn't need drained afterwards, the K beater knocks all the buttermilk out, but in the FP it needs draining down. I wrap it in kitchen roll and squeeeeeeeeze if I do it in the FP (when its only one or two tubs)

Does anyone know how much salt to put in for lightly salted butter? Over here (I now live in New Zealand) cream comes in bottles and is measured in mls not pints, so "per tub" isn't really a good standard of measure. It is also expensive, so the less I can waste the better! :)

Not really sure - I think that it's going to be a matter of personal taste. I decided to leave mine unsalted as I was storing it in the freezer in small amounts so I don't think there will be a danger of what I am using going off.
If I were going to try salted then I'd add 1 level teaspoon to a pint of cream and see how that turned out

Your wonderful, the buttermilk brings back childhood memories, we use to go to a working farm when I was a child and they made butter, and you could buy a jar of the buttermilk for 5p, it was lovely, and the butter.

Going to have a go with daughter, thank you for bringing a childhood memory back. xx

I'll add this to the existing thread to give you more ideas :)

As has been mentioned, I think it's only cheaper if you can get cheap cream. Butter's always on offer here, and I bougt French President this week :T
