  • I am hoping to get the River Cottage Preserves book for Christmas - supposed to be very good and I love the other RC books too so fingers crossed!

    Well, I decided to do it and yesterday bought the WI book of preserves. It looks really good and know I am just choosing which recipe to try first - at the moment I like allmost of them!!!!!

    I choose 2 recipes I am going to make this weekend - spiced apricot and cranberry chutney and cranberry sauce (all Christmassy!). I like that it says how much it will make (how many jars of what size). Will let you know how I get on with this!

  • I ordered the River Cottage for my own pressie as Xmas is too far away for me to wait for MrEL to get it... eagerly awaiting it next week from Amazon.

    Completely forgot to update you!!!! I did the works and they look good! I haven't tried the chutney yet, as it needs to stay for a while, but cranberry sauce is lovely. It is not so sweet as the one from the shop, it has some bitterness to it, which goes very well with the meat in my opinion.

    The number of jars and sizes given in the recipe is not very accurate in my experience. It was supposed to be 1 jar (227g) from 375g of cranberries! I doubled the ingredients as I had more cranberries, and I made 1 jar of 0.5l and 3 jars of 227g.

    The recipes were very easy!!! Also, for cranberry sauce instead of port I used marsala (had some of that at home and didn't want to buy a bottle of port for 5 spoonfuls, as we don't really drink at home)

    I've just bought the River Cottage Preserves Handbook by Pam 'the Jam' Corbin. I've now broken my NYR not to buy cookbooks twice and it's only Jan 10th:D :rolleyes:

    I must tell you that this book looks fantastic. Not a big book but well produced with lovely photos. It has an excellent chapter called 'The Rules' which explains all about sterilising, sealing jars, pectin ,seasonality and how long various types of preserves will last.

    There are recipes for jams, jellies, chutneys, pickles, cordials, fruit liqueurs, bottled fruit, relishes, sauces and vinegar. Each recipe comes with a recommendation for which months to make it in. even in January there is plenty to choose from. My mustmake list for this month includes marmalade, preserved lemons, hearty ale chutney and onion marmalade. I shall be annotating my calendar with recipes from this book to try.

    I would definitely agree with this. We have this one. I've never been disappointed by a Mary Norwak book yet.

    I had the same book for christmas and Ive already filled my diary with a month by month 'preserve to do list' I thought I might be considered a bit sad doing this but am sooooo pleased to see Im not the only one. :T
