Does anyone know how to make samosas with filo pastry please?
I have some filo pastry to use up and I'm clueless.
Whate receipe do I use to make the samosa filling? Do i deep fry them afterwards? is there a healthier alternative?

This recipe for potato and pea samosas is cooked in the oven! You could use any recipe and cook them like these!

I'm not sure whether filo is good deep-fried. Nigel Slater has a dreamy recipe for filo parcels stuffed with feta cheese and pesto, so if you have any pastry left over after your samosas that's what I'd do with it0

I also use filo pastry with feta cheese. Crumble some feta in a bowl with a bit of milk and egg yolk for the filling. Layer 3 or 4 squares of filo (about 10cm square) on top of each other andbrush each layer with melted butter and olive oil mix so they stick. Add a teaspoon of cheese mix and fold into a triangle. Brush with egg and sprinkle with sesame seeds and then bake for around 15 minutes. They are very yummy.0
