    spinach and cheese pie (greek dish sorry being lazy can't remember correct term.) similar to vegetable spring roll but with choppedd nuts and syrup.

    Spanakopita - but there's no syrup in it (yuk!)

    I've got a pack of filo in the freezer - might make this for dinner. :D

    Have some frozen filo with date of oct 09, would it be ok to make some mince pies with it, cook them, then freeze til needed at Xmas?

    I also have some frozen mushroms, could I add these to a filo parcel, (not in the mince pies :rotfl:) cook, and then refreeze?

    Getting a bit confused with all this, working out if something can be refozen if the cooked state is altered seems simple til you come to do it. Scared of poisoning someone :eek:

    Only a month out of date - that's nothing - I've just been running down my freezer and I've got mammoth at the bottom :rotfl:

    Yes, you can cook your frozen mushrooms and refreeze ;)

    To be honest, I would leave the pastry in the freezer until I wanted to use it all straight away instead of cooking it then re-freezing. Aslong as it hasn't been defrosted at any point it will be fine.

    Thats what I would do too-it won't go 'off' in freezer, I have pastry 6+mo past best before (and home made thats goodness knows how old) it always seems ok....

    Try this......sautee your mushrooms with some leeks, add some chives and crumble in some blue cheese (any works), mix up then spread down the middle of a few filo layers and fold into a big parcel or 'strudel', bake in the oven till golden. Its delish!!!

    I had some filo in my freezer for a few years after the BBE and it was fine when I came to use it. I've got vol au vent cases which are even older, and they have been fine too when I've defrosted some and cooked them (I really must use them up this year :rotfl:). I've also got puff pastry which isn't even in its original packet any more, but I know it's over the date, but is fine when it's defrosted. I know things can get freezer burn if they are in for too long, but that's not usually a problem if it's wrapped up properly.
  • Does anyone have any inspiring ideas for me as I am emptying the freezer and just wondering if I can use a pack of filo pastry for a dinner today?

    ok, tartlets, using 3-4 layers of filo in each well greased hole of a muffin tray, then add whatever filling you fzancy, chpped ham and cheese, mushroom in a little cream sauce, tomato peppers and italian herb, etc etc

    ps layer spinach then ham then break an egg inand bake :)
