Some years ago we used to sometimes use Homepride Potato Bake, basically a jar of sauce that you pour on top of some sliced potatoes and bake in the oven. Homepride then discontinued the product.
Fortunately, I then discovered that the Co-op had a similar own brand version, which had the added advantage that it was cheaper. Now though, that too seems to have been discontinued.
Does anybody know if anybody else manufactures a similar product? Alternatively, how do you make your own?
Thanks

I remember these; don't know if anything similar is still around. To do it from scratch, I'd make a basic white sauce and mix in yummy things like crumbled crispy bacon and caramelised onions.
JulesThe ability of skinny old ladies to carry huge loads is phenomenal. An ant can carry one hundred times its own weight, but there is no known limit to the lifting power of the average tiny eighty-year-old Spanish peasant grandmother.0 -
To make a potato gratin what I do is put a layer of cheese in the bottom of a greased overnproof dish, then layer in sliced cooked potatoes (and anything else you fancy - cooked onion or leek or - well, whatever really - I usually have a layer in the middle of the potato) - then put on a layer of fresh breadcrumbs and grated cheese, then cover with about 150ml of single cream. You can grill it if the ingreds are hot, for 3 or 4 mins, or bake it in a medium-hot oven for about 30-35 mins.0

I wonder if it is okay to make a cheese & onion white sauce and freeze it? Would it separate on defrosting?
I found a jar of Co-op Potato Bake on the reduced shelf a couple of weeks ago, half price and still loads of shelf-life left. I wondered why it was reduced - never thought it might be a discontinued line.
Why do supermarkets keep doing this? Just when you get used to something it disappears. Sainsbury used to do a can of vegetarian bolognese sauce, which was brilliant, but it got discontinued. Also I used to prefer their own version of Bean Feast packet mixes, but they seem to have gone the same way. It makes me nervous now to get too used to something in case it is suddenly no longer available.
I haven't bogged off yet, and I ain't no babe

For a lower fat version, Gordon Ramsey used chicken stock over his potatoes instead of the milk/cream/cheese normally used. I tried it and it is nice, i just used a couple of OXO cubes dissolved in water. The top ones goes nice and crispy and the ones at the bottom are soft. Layer potatoes with sliced onions and perhaps other root veg?0

That thought had occurred to me. I've got some jars of Homepride Pasta Bake somewhere, but would prefer to know that it won't end up as a complete disaster before giving it a go!

I made one the other day, when we were really eating the thin air in the cuboards!!
I took 4 potatoes (large ones), sliced thinly, and then layered them up in a oven dish.
Then chopped one small onion and melted some butter in a pan (about 1-2 cups, but depends on how many potatoes), mixed with some dried herbs, then pored over the top, and put in the oven for 45mins (high temp).
Was amazingly a very filling and nice tasting dish - I wouldn't recommend making it too often, as its really unhealthy with that much butter, but would be really nice with some veggies.
But is great for an easy meal when you have empty cuboards!0 -
A tomatoey pasta sauce bake makes a good lower fat substitute.0

I made one yesterday, as an accompaniment to a casserole.
Melted a knob of butter in a large, shallow, pirex dish (or similar)
Layered very thinly sliced spuds to the top of the dish, grinding salt and pepper in a couple of the layers.
Warmed pint of semi skim milk in the microwave, and carefully poured it over the spuds, this came to over 1/2 way up the potatoes.
Covered the dish in foil, and baked in the oven with the casserole for a couple of hours. Took the foil off 20 mins before serving to brown the top.

Many thanks for all the suggestions, now I'll just have to give them a try!
