I've decided to have a go at making chutney for the first time. Has any one got advice for me please.
Ive got lots of home grown cooking apples and have googled and found apple chutney recipes.
How do i stop it tasting too vinegary? we like shop bought ones that are quite sweet- should i just add more sugar than it says?

has anyone tried making chutney in a slow cooker?
i thought that way i could just put it in and leave it- would it work???

My friend made runner bean chutney in the microwave last week (sounds disgusting but actually very nice if a little too sweet for me; very similar to caramelised onion chutney).

I suppose you could do it in the slow cooker but would need to leave the lid off some / most of the time to evaporate the excess liquid. When it is done it should be quite thick with no pools of liquid. You could do it like this I guess if you don't have a large enough saucepan, and this would avoid burning it which can happen if you use a thin pan, but negates any saving on power over using the stove top. I guess if you used the slow cooker many times like this it might not do it any good? Can't imagine it would hurt occasionally though.
  • Hi Donna
Dawn W is right - I have just checked a chutney recipe in my slow cooker book & the instructions are to remove the lid for the final hour of cooking to allow the excess liquid to evaporate. Happy chutney making x:j
  • don't change the recipe - you can always add a little honey if you think its too sour for you once its cooled, but it may not work if you change it before its cooked.

I made chutney for the first time a few weeks ago, I got a load of plums from someone on freecycle, found a recipe on the bbc site for plum chutney and made it the usual way. Even though you are supposed to let it mature for a few months I couldnt resist trying it this weekend with some cheese and it was fantastic.

Let us know how it goes Donna, I cant believe I've never made it before. Its so easy and you dont have to worry so much about temperature like you do with jam. I'm hoping to make some with quinces in a few weeks, just discovered the Japonica (Japanese quince) in my garden is edible if made into chutney or jam.
