Pour some out into a sterilised pet bottle and let it calm down for a couple of days, then top the demi back up. It's best when starting to only add liquid up to the shoulder, or a little less in warm weather till fermentation eases off. I learned this by experience!

ditto what pol said. obviously make sure other bottle isn't capped, use cotton wool if a bung won't fit.
just by the by i just use one carton of OJ plus some raisin concentrate when i make orange wine, perhaps the sugar in the juice, plus sugar is making the yeast so happy?0 -

Checking back in here to report that my kit is starting to slow down. At its peak I was getting roughly one "plop" every second or two, but its down to maybe one a minute. I'm guessing it only has a day or two to run - does this sound right, or should I leave it longer to be sure? Can you leave it too long and it spoils or something?
I'll be starting my apple juice wine in the next couple of days, so these posts on fruit juice wine are very useful - thanks!0 -
Thanks for the suggestions everyone, i dont have a spare container so ive taken the airlock out and covered it with a cloth, (airlock was useless because the water was being pushed out anyway)
ive also moved it to a cooler room, it's still spilling out some, so i guess i'll just have to wait till it calms down a bit and hope for the best hey
. I have a kit one going to and that is pretty mental too, think we must have brought hyperactive yeast :eek: .

Just a quick update, it has calmed down today, ive put the airlocks back on and all seems well, just hoping the wine has'nt spoilt, thanks everyone for you replies.

Hi make life easier, my first attempt (just a couple of months ago) was a kit, but was just for one gallon. It was a strawberry wine, and it too was for drinking in not much more than a week. It's ok, nothing special. Quite a simple flavour and definitely needs chilling, but certainly ok. I just did it to get familiar with the process, and I'm gradually getting more ambitious. In fact, stratch the gradually - I'm totally addicted to winemaking now and all three of my demi johns are occupied and I need another one sharpish as I have an experimental hedgerow wine in my fermentation bucket as we speak!0

I think I might start experimenting soon starting from scratch but it just that everything was in the box so to speak (only had to add 4kg of sugar) and I borrowed the big furmenting tub from my sister.
I don't know if I'd be so patient to wait a couple of months for it to be ready. My Sis did red wine and it was really nice, but I prefer white so that's why I thought I would try it. I bought a five gallon bottle to store it in when it's ready but I think I might cork a few bottles up and save them for Christmasbecame debt free December 060 -
A couple of months! The wine I started going today I'm expecting to have to leave for a couple of years! On one of the other winemaking threads there is a recipe for wine made with herbal tea bags which apparently is quite quick. I have a batch of that on the go (plopping away in a demi john at the moment) so I can keep you posted on that one. It seems like most fruit/flower country wines need to be left for a year or so to mature, and some more. I was going to do rosehip next, which needs to be left for 2 years at least, but having put a handful of rosehips in my hedgerow wine today I'm not sure I could stand the faffing about with the seeds!0
