What can I do with green pepper?

Is there a good way to cook them that will disguise the taste or not make them taste so bitter?
Whenever I buy them I end up throwing them away which I hate doing as I don't ever want to waste any food but I am determined not to do that today and need some ideas so I can use it in cooking tonight. Need to do it tonight as I'm going away tomorrow and got some veg to use up.
Would be very grateful for something that is easy to make and preferably that I can freeze for when I come back.

Grill them until they turn black and charred, peel the skin off, slice and deseed them, and when they're cold, mix them into balsamic vinegar/olive oil. Lovely and slippery; never tried freezing them though.

I'm pretty sure you can freeze them.Try cutting up into small chunks and open freeze on a baking sheet, when hard enough gather into a container and use from frozen.I don't know how to make them taste nicer though I always buy red ones - aren't they usually the same price?0

Do I need to do anything to them before I freeze them like put them in hot water for a few mins or do I just wash them then freeze them?
There isn't a clear space in the freezer to do that open freeze thing, just a few little spaces in which to put a couple of small freezer meals in.0 -
i chop mine up and just bung them in a freezer bag... then when i wanna use them i just "vigoursly rub" the outside of the bag if they have frozen into clumps and they seperate.
i dont like the taste of them too much.. but i use them in stir fries or fajitas and you can hardly taste them!0 -
I think the way johanne does sounds good, and no, I wouldn't do anything to them first0

So I could just chop up the peppers, freeze them, defrost them then freeze them again? Or would I just use them straight from frozen in a pasta sauce for example?
Sorry for all the silly questions but I have never frozen raw veg before. I have either already bought it frozen or cooked it into a pasta/bolognaise sauce and then frozen that.
Don't really feel like cooking now but have bits and pieces of various veg that I have to use today one way or another as I won't have time after work tomorrow before I travel.
I have onions, courgettes and peppers to deal with in one way or another.

I'm pretty sure you can just cook them straight from frozen.I would do that, after all those sort of veg -peppers,onions courgettes appear uncooked on frozen pizzas don't they? I'm not saying they would be at their best after a spell in the freezer but you wouldn't poison anyone by cooking them from frozen.If you defrost them first they will be very soggy.

not sure about the courgettes as i dont eat them... but i do the same with the onion as i do with the peppers.. and yeah i use them from frozen. Just use a handful or however much i need out of the freezer bag and put the rest back in the freezer for another time. You can then freeze the meal you make with them afterwards - i use frozen onion in bolognese then freeze the extra portions.
P.S. i found a tip on here that i use too - for the onion... aswell as chopping it into chunky bits and/or onion rings and freezing - i also dice some and put the diced bits in a ice cube tray in the freezer... so when i need "diced onion" i have some ready prepared just pop out a block or two and voila!0 -

I like stuffed peppers ,if you mix some cooked mince and sage and onion made up stuffing togeter and fill the empty shell of a halved pepper it makes quite a tasty and filling meal.
I have also de-seeded them and just cut them up in chunks and froze them in a bag in the freezer.They don't take up a lot of space and they are nice in spag bol or even liven up a chilli or soup.0 -
hi. I have checked my freezer book for you. It says for short term freezing you can freeze unblanched. otherwise blanch- in boiling water halves for 3 mins, slices or rings for 2 mins. Cool drain and pack in polythene bags.
