Now I'm worried.... have been watching this thread and was planning to cook mine in slow cooker tomorrow daytime hoping it would be ready for guests in the evening.... but it's quite big (will have to chop some off to fit it in the SC i think). So how long to cook it for? Reckon it might be 2.5kg?0

Well mine is cooked, I changed my mind and decided to have it for supper tonight. I sliced up onion, leek and carrot, and put it in the bottom of the cooker, some herbes de provance and 6 peppercorns, put it on auto and cooked it for 4 1/2 hours, I have now left it to cool in the liquor before slicing it.
The liquor I am going to use as a base for lentil soup which will do us for lunch for 2 -3 days with some HM bread.
I have just baked 2 dozen mince pies, now need to hide them from DH or he will eat the lot and I will not get a smell!!!!!

I want to cook my bacon joint in the morning ready for tomorrow nights tea,
Do I completely cover the joint or no?
I like the sound of adding apple juice and honey to it, do I half fill it or cover it all?

I think some people cover the joint completely but I never do and it works perfectly. I just add water, onion, a bay leaf, black peppercorns and sometimes a carrot if I have a tired looking one at the bottom of the fridge so that I can use the juices to make lentil soup the next day but the apple juice and honey sounds delicious.
Take care not to over do it or it doesn't slice easily. I take mine out once done, take off the skin, score the fat, smother in mustard and brown sugar and pop it in the oven for half an hour so that the fat crisps.

I just had a look and found this older thread which should give you some more ideas: is gammon good in slow cooker
A lot of people recommend cooking it in coke (full sugar) but I've never tried it so can't comment.

When you say be careful not to over do it, how long would you say to put in slow cooker for?

Sorry I've only just seen your post.
I'd do it for about four to five hours in the slow cooker so tonight might be a better idea to do it tonight than while you're at work tomorrow. It's fine if left longer but just more inclined to fall apart and not really be sliceable. Good luck with it.

I have here 1 x 1kg bacon joint.....should I
A) Bake it in oven...Boil it on hob... or
C) Some other way that I haven't even thought of;)
This is the first time I have ever bought one of these, do they shrink much?
I would like it to go round a bit as I want it for two meals....

Do you have a slow cooker? There are quite a few recipes for a bacon joint in the slow cooker.
Haven't tried any yet (but plan to) as I have just got my slow cooker back out.
I think the main thing to remember if you are doing a bacon joint in the slow cooker, especially if it is smoked, is to soak it first to get rid of some of the salt.
