would be two joints of 3.5lb each then.

Put the gammon in a large pan, add about six peppercorns and a peeled, halved onion. Cover with full fat coke - diet doesn't work!! Cook as for the timings above. Lift out & let cool a bit. Remove the rind , leaving a laye of fat. Score the fat diagonally so you get a diamond pattern. Coat with made up English mustard and pat demerara sugar over. Put into a foil lined roasting tin (easier clean up ;) ) and put in a gas 6 or thereabouts oven for half an hour to glaze.

    I do this a lot - it's yum!

I have done the Nigella coke recipe. It does make excellent gammon. The only problem is you waste the stock. Nigella suggest boiling red cabbage in it but I had to draw the line somewhere.

Here is a link to Nigella. Its the same as above poster.

I bought a similar monster on New Years Eve at 5 pm in Asda for £5. It was too big for one (or even two) meals, so I sliced half of it into thick slices and froze it (uncooked). I defrosted these well into January and we have lovely gammon steaks. They were delicious - I wish I'd bought two!

    Hiya,

I cooked a 2kg gammon on Sunday using the coke recipe. I cooked in the coke for 2 hours and then roasted it for 20 covered in dark sugar.

Several meals later (and some given to a needy friend) there's still a load left.

Any ideas for using it up? I was thinking egg fried rice? Sandwiches? We're getting bored of gammon and salad LOL!!!

    Much love,

    PGxx

Try cooking one half of it in ginger ale, peppercorns, onion etc and then bake with a glaze of ginger jam/marmalade and brown sugar, it's yummmmmmmmmmmy!!!!!

The last one I bought was just under 4kg when Costco had the offer on. I looked up lots of recipes and then bottled out and did the same as I usually do, though sometimes cut some steaks off it. Hadn't seen the coke one, but don't think the teenagers would have approved, not that they wouldn't like the gammon, but waste good coke???

I cut it into 4 pieces, so about 2lb each, put two in the freezer. I boiled one piece and roasted the other, determined to do the taste test so I would know next time. The roast did not lose as much salt, but obviously the boiled gave a better stock for lentil soup.

Still couldn't decide which we prefer. We like to have some hot with mashed potato and cabbage. Then cold with chips or potato wedges. Then anything, sandwiches, pasta, fried rice. Slice it up and freeze before it gets too old. I don't make that mistake anymore.

Mmmm, might take a piece out of the freezer to cook at the weekend.
