    meal plan for the week ahead. Monday to thursday are hm from the freezer

    Friday - Herbie haddock, hm wedges & veg
    Saturday - either beef stew or spag bol batch cooked for freezer
    Sunday - at my sisters
    Monday - lasagne & veg
    Tuesday - chicken curry
    Wednesday - sausage casserole & veg
    Thursday - sweet & sour pork

    Glad you liked the jambalaya :D I usually use 1 chicken breast and 150g rice for the 3 of us ;) (2adults and a 2yr old) HTH for next time :p

    Glad the trip went well, just take it easy (if you can with a 2 yr old!) as much as you can. Mums are great- I miss mine being so far away.
    I used 1 chicken breast and 150g rice too- it just seemed to expand :eek: lol, was so yummy we had it two days in a row and a half portion with some salmon the next day- in other words 5 adult portions and 3 DS portions (about 1/3rd size) - don't worry though the extra was carefully cooled and then reheated in portion so not to reheat the chicken/rice too many times ;). We will be having it again soon :D.

  • is this an ingenious way to use up HM burger mishaps or a recipe? if its the latter please share - we love burgers in this house and are always looking for new spins on an old favourite

    Oh, it's a bit of both, really. Here's what I do:

    4 burgers, chopped or broken into pieces
    Big squirt of tomato puree
    2tbsp red pesto
    Chopped onion
    Chopped red pepper
    Garlic powder
    Salt and Pepper
    Dried mixed herbs (a tsp ish)
    Cubes of potato

    And this is how we do it :D :

    Fry the burgers until brown, then add the onion to soften along with a sprinkle of garlic powder and a bit of salt and pepper. When they're nice and soft, add the tomato puree and the pesto and stir it all together, cooking on a low heat until it's nice and mixed and the potatoes are done.

    In a separate pan, fry the cubes of potato until golden and soft in the middle. When they are done, drain them on kitchen roll.

    On plates, dollop piles of the burger-hash into the middle, dividing it between however many you're cooking for. Ordinarily, I cook for two, but just up the quantities of burger and onion per person to allow for more portions, not to mention puree and pesto. With the dollop in situ, drizzle cubes of potato over the top to look like boulders. You can put some grated cheese over it if desired. Serve with a bit of bread and butter.

    Voila, Broke-Burger Mountain. :) I love having fun with food. :D

    LOL I'm not sure yet :o , just gonna make it up as I go along :p I think I'll just brown some chicken thighs in a pan with some sliced peppers, red onion, thyme and oregano. Then add a tin of chopped tomatoes and bung it in the oven for about 50 mins. Serve with cous cous made up with chicken stock and some peas and sweetcorn. HTH :confused:

    Argh! This is the third time I have tried to post, and if it doesn't work, I will give up !

    Friday - scary sausages, monstrous mash and gruesome gravy - vile vegetarian hot dog for DD. Well, 'tis Halloween !
    Saturday - will probably feature a visit to the local curry house, but as we are entartaining a crowd, I will also be making sausage rolls, scones, biscuits and will also have a dish of Boston baked beans on the go in the slow cooker, in case of early arrivals, late stragglers and very poor people :)
    Sunday - Mrs M's savoury meat slice (yum!) roasties and yorkies; southern fried quorn burger for DD
    Monday - Weezl's turkey korma; veggie hot dog, rice and beans for DD
    Tuesday - HM gnocchi (freezer), HM pesto (ditto) and stir-fried veg
    Wednesday - Boston baked beans (with chorizo for us, without for DD) and HM bread
    Thursday - pasta e fagioli (aka canelling bean and pasta stew)

    This weeks' menu:

    Thursday: Scrambled Eggs, Crispy Bacon and Toast (DH's request - he is still feeling poorly and full of cold, as am I)

    Friday: Huge Chilli Con Carne - We have daughter, s-i-l and two grandsons coming for supper, after we have taken the boys trick-or-treating. Boys will have spag bol, which DD will bring with her. Our first Samhain Celebration together, so it should be a good evening!

    Saturday: Turkey & Cranberry Sausages (bought at farmer's market - hope they're nice!)

    Sunday: "Pan to Oven" Pork Chops with garlic (one of Hugh Fearnley-W's recipes - lots of garlic YUM!)

    Monday: HM Pea and Ham Soup with HM bread.

    Tuesday: Lamb Koftas (never DID get them last week LOL)
    Wednesday: It is our wedding anniversary (14 years):T , so we are splashing out and having one of the farm-shop rib-eye steaks between us, with saute potatoes and roasted mediterranean veg.
    Obedient women are never remembered in History!

    How many of you posting the meal plan actually manage to stick to it? I find that it is an useful guide but I don't often manage to get it right, one day the kids clamour for something different, another day DH cooks before I am back home (something completely different from the plan) etc...

    Anyway here is me trying again to put some order in the chaos of my family life:

    Friday: Dinner out! Followed by an evening of classical music (got very cheap tickets) - looking forward to the treat, probably a cheap Chinese in Soho!

    Saturday: The tofu and stir fry that we didn't manage to eat during last week, made up of all the leftovers from the last veg box.

    Sunday: Nut cutlets (bought reduced) with veg from the new veg box, roasted pumpkin, fruit and yogurt

    Monday: Pasta with chickpea and tomato sauce, salad, fruit

    Tuesday: Split pea and veg soup with cheesy bread, biscuits

    Wednesday: Me probably a sandwich (on the train on my way to Italy), the rest of the family probably undoing all my good work of giving them healthy food cooked from scratch and having the first of many prepackaged meals/takeaways/goodness knows what rubbish.....ah well....there's not much I can do is there?

    Thursday: family: as above. Me: probably having a lovely pizza with roasted veg in a nice pizzeria in Civitavecchia waiting to catch my ship to Sardinia.

    From then on, it is MAMMA'S COOKING! Can't wait! I shall be back 1 st heavier and will have to rejoin the Weight thread LOL
