    Good tip;) but I can't help pointing out that if you troll on down to your nearest farmshop, and there are plenty about even near cities, then you can buy a 25 kg sack of homegrown spuds for around £6-£7

  • I have made these at Xmas time several years ago and sprinkled them with parmesan and fresh herbs and they are delish, a good alternative on Bonfire night maybe with some sliced up cooked sausage in between the slices of spud nice and filling for a cold frosty night.Excellant site BTW

    I would think so, in fact it would be nice with pork. I didn't have a lot of time this morning so couldn't explore the site, I'm hoping there will be further delights. :D

    I have done this style of roast potato for ages. My grandma did them for us when we were younger. We called them hedghog potatos.
    When I do them with a roast I dont put the seasoning on them just leave them plain and baste them with juci from the meat...................... yummmmie

    But i do potato wedges with seasoning to go with other dishes. Bit like tonight HM pizza and HM wedges!

    I do a version of this by doubling up on baked potatoes, then on day 2 I just miss out the microwaving stage cos they're already cooked.

    And another favourite:
    cooked baked potatoes halved lengthwise on day 2, then scooped out, and the insides mashed with cheese or anything that inspires you (left over ham, chopped, onion, or just a few herbs) add an egg, and put in a hot oven until browned (20 mins-ish). Cheap, yummy and filling, or they can be glammed up - I once made them with some smoked salmon, dill and creme fraiche.

    I would like to make this today, but have a question about the recipe: it says microwave the potatoes for 12 minutes on high.

    Is that not far too long? Would expect them to be nearly pulp by then.

    Any advice/experience with this much appreciated.
