Smokin' Hot Potato's

Hi,

Just had to share this potato recipe I found today. They look lovely. I will try them tomorrow.

    I've seen this done with onion slices and garlic butter in between too.

  • I think these are called hassleback potatoes or something like that. Never had them with the suggested seasoning though, will give it a try for something different as DS2 does not like chips!

    Yes, hasselback potatoes ;) They are really good. Nigella has a recipe for unspiced ones in Forever Summer (I think it's that one).

    Her tip for slicing the spuds so that they stay whole is to choose potatoes the same size -about the size of a small egg and to sit them on a wooden spoon to cut them. You just slice down until you hit the spoon.

    OK, now I've read the recipe Bongedone posted I see that the same tip is given with a handy picture too. Note to self -read whole of thread before wading in with advice:doh:

    Thank you for introducing me to 'The Noble Pig' - I've found the 1-2-3- chicken, there are sweet potato muffins and it looks like loads of other things.

    Brilliant.

    Last night we had 'Mock Goose' and it was the best one I've made. It is so simple.

    one and a half pounds of potatoes, washed and thinly sliced.

    2 big/I used four smallish cooking apples though I think it would be a good way to use old eating apples. Peel and cut them in small slices.

    Onion gravy - left over, but I would make it specially next time.

    4 - 6 oz grated cheese

    Put half the potatoes into a large flat dish
    cover with the apples
    sprinkle with a third of the cheese
    sprinkle with some dried or chopped fresh sage
    pour over the gravy
    put the rest of the potatoes on the top
    sprinkle with the rest of the cheese
    cook in a hot oven for about half an hour.

    you can cook more slowly then put the oven up for the last 10 minutes to get the top good and crispy

    I love potatoes

    I never noticed the 1-2-3 chicken. It looks nice also. I wonder if that will work with the pork loin that I have. Smokin' hot potato's with 1-2-3 pork loin maybe tonight.
