  • I have been struggling with making homemade Scottish Tablet. 1st time was great but cant find the same recipe, my grandaughter 11yrs wants it for xmas. last batch i burnt and one before to hard. But will have another go. Merry christmas

  • This is by far the best recipe I have used. You do not need a sugar thermometer for this one. Also there is a video of Phil Vikery showing you exactly how to do it. I made chocolate orange fudge and it is truly fantastic. Lovely and smooth, not at all grainy. It takes a bit of elbow grease but definately the best

I think it can last 7-10 days in an airtight container, I think you can freeze it and it will last 3months in the freezer. Im no expert, just going on what other sites say.

I made Nigella's dark chocolate fudge last week for DD's Christmas Fayre, it was so good I had to make a second batch as most of the first one got munched.
The recipe on her website (I googled Nigella and fudge and it came up) has pistachios in it. I left them out as they were too expensive. Recipe was great without them.
You can freeze this, its is especially delicious taken straight form the freezer too :o:D:D

It was a big hit at the xmas fayre and have been asked to make some for the teachers, so thats my thank you gift for them all sorted this year.

i have this recipe also - was very quick and easy to make - cut into chunks and freeze in tuppaware - you can eat it straight out the freezer too. it tastes like fudge but its not technically fudge.

This is a recipe for Microwave Fudge, I posted it last year as well, Not sure where I found it, but I have made it and it is Easy Peasy and really works well.

Tin of Condensed milk (around 400g?)
    125g Butter
    500g Castor Sugar
put all in very large bowl (as it rises in bowl when it boils)
cook on high for only 9-10 mins (mine is 850w)
    stir every 3 mins
be very carefull it doesnt boil over
after 10 minutes take out and add 5ml vanilla essence
add any other flavours, or things like raisins, whisky, what ever you like
eat when cool............I mean save till Christmas day:rotfl:

I have posted this before, most people love it, some hate it, either way it is so quick and easy, it doesn't really matter! and no need for a thermometer!

I've just had a go at making this microwave fudge... just realised I've forgotten to add the vanilla essence ... oops hope it tastes ok! :s

It'll taste fine - I don't think the vanilla adds much to it tbh.
Been attempting fudge all week and can't seem to get it the right consistency - I have no thermometer. Made some that was overcooked and crumbly but tastes gorgeous. Made some coconut fudge that I think was slightly undercooked so it's a tiny bit squidgy - again tastes gorgeous though. I'm having fun (and getting fat I imagine!) trying to get it right!!
  • I've just made some waiting to take it out soon :)

I too used this recipe for inspiration, and also ditched the pistachios due to them being so expensive. Check out my blog re making it!

Made it again tonight and used citrus peel instead of the pistachios. They make great Christmas gifts!

    Hi

We have been making tablet recently for my daughters nursery fayre and finally found a good recipe.

    1kg sugar
    100g unsalted butter
    1 x 400g tin condensed milk
    1 cup milk
    Vanilla essence to taste

Grease 2 regular sized baking trays with butter.
Mix the milk and sugar well in a large pot. Add the condensed milk and butter. Put on a high heat. Stir often and bring to the boil.
Once boiling reduce the heat and simmer. Stir occasionally and wait for the colour to deepen to desired level (we normally do about 20-25minutes after it starts boiling). Add vanilla to taste.
    Remove from the heat.
Beat the mixture for around 2 minutes. It should thicken a bit, but dont beat it for too long because it still needs to be pourable.
Fill the two baking trays with the mixture (and then try not to move or disturb them until it is property set).
It takes a few hours to set properly but if you see a glaze forming on the top after about 30min its probably going to be tasty!

    Hope this works for you

P.S. Be very careful with the boiling sugar and dont be tempted to try and taste it straight from the pot!
