How long will Red Pesto keep in the fridge?

I bought a jar of red pesto last week, opened it and it's in the fridge. How long will it keep for? The label says "use within 7 days of opening" but surely it must keep for longer than that!!??

    If you pour a little olive oil over in to cover the surface (a couple of mil deep) that makes it last longer. Couldnt guarantee how long but probably at least a week.

    I've had a jar of gren peso in the fridge for over a month and it's still fine
    I haven't got one!
  • I keep pesto in the fridge for AGES! So long as there's no mould on it, I'll eat it (and I've never had food poisoning) :rudolf:

    Me too - I buy the tubes quite a lot and they say use within one month but I rarely do.
    3 kids(DS1 6 Nov, DS2 8 Feb, DS3 24 Dec) a hubby and two cats - I love to save every penny I can!

    I have a jar of pesto in the fridge at the moment that says once opened use withing 7 days.
    I see that all the time but I have never seen mould on pesto and it always looks fine even after months and smells fine too.
    In fact, I don't think I have ever used up pesto in the time that it states on the jar ever! It has such a strong taste that I only need to use a little so it can last ages for me.

    Haven't bought a jar for ages, as always make my own nowadays and freeze in ice cube trays. Suppose you could do this with with the bought stuff if you are at all worried.

    2 tbs grated Parmigiano-Reggiano cheese
