Fish pie using the fish, potato, milk, flour, and herbs.

Coconut rice pudding - not sure if you can use basmati rice but cant see why not. Using the coconut milk, rice, and maybe some lime juice.

    How's that for a start??

I'd go with the fish pie...lovely comfort food for these cold evenings. I have a good recipe, let me know if you want me to post it.

If you have ingredients and want ideas of what to do with them, its worth looking at the BBC search by ingredients page here. You just enter the main ingredients you have and it comes up with the ideas.

  • Yes, please could you post the fish pie!
I've already had toad in the hole this week, although i could eat that every night!
I've got some pudding rice, so I may give that a go as well!
i've googled (excuse me!!) and found www.cookingbynumbers.com and that has thrown up loads of ideas as well, the caremalised citrus fish sounds nice but I think I'm gonna stick with fishy pie as I haven't done that before!

    Ingredients:

Any fish ( I used a combination of white fish/salmon/prawns)
    Milk
    Grated cheese
    Hard boiled egg
    Frozen peas
    Mashed potatoes

    Method

    Poach fish in milk
Remove fish and arrange in a deepish serving dish
Add quartered hard boiled eggs and frozen peas to the dish
Use the milk (that the fish was poached in) to make a white sauce
Add grated cheese and black pepper to the sauce and pour over the fish/eggs/peas
    Top with mashed potato

Pop into a hot oven for 20 mins or until the potato is golden

Sorry I haven't included quantities, but this is a recipe I made up myself, so I tend to make it up as I go along depending on how many are going to be in for tea that night.

  • For a dessert how about pancakes with lemon/lime and sugar?, or if you have any bread make a citrus bread and butter pudding, substituting the rind and juice of the lemons and limes for the usual dried fruit. A nice quick recioe that kids love is "Poor Knights of Windsor" - Mix together an egg, milk and sugar, cut bread into fingers and soak them in the egg mixture. Fry these until golden brown on each side and serve sprinkled with either ordinary or icing sugar.
  • Had a great fish pie!! With lots of carrots, peas and mashed swede with nutmeg!!
We had so much that we couldn't eat a pudding so we had a bit of fruit later. I've since picked up some more reduced salmon and popped in the freezer for next time, Thaks for all your help!
