Sorry to resurrect an older thread, Husband has started a Gluten free diet for health reasons and I'm interested in baking with cornmeal so wondered if any of you have tried it?
I've made cornbread before as I love it, but only with wheat flour in it too-if anyone has a recipe for anything like this I'd be really grateful.Remember to always be yourself-unless you suck. Joss Whedon0 -
Google is your friend! Just google "gluten free cornbread" and loads of websites come up. Just have a look and see if you can find one you fancy trying!
My daughter only used to use cornmeal (polenta) to make cornbread for her son when the Dr thought he might be coeliac (fortunately he wasn't just gluten intolerant).

Hi everyone,
I have been kindly directed towards this board as I'm told you are a very wise bunch and may be able to have me save some much needed moola.
I have children with varying allergies, mostly gluten and dairy!
I need some ideas for foods that I can make that don't include these ingredients and are not ' substitute' ingredients. No fake bread, fake pasta or fake milk.
One of my children is also allergic to soya so that is also off the menu.
All nuts ok, and it try to avoid too much rice as 1. It's expensive and 2. We are all sick of eating it.
I tend to take leftovers for my lunch also so stuff that can be eaten cold the next day is also useful.

i try to cut down on gluten so eat jacket pots with tuna mayo and salad
falafel with hummus and salad
i make potato gnocchi but a small amount of gf flour required, with hm tomato sauce
I tend to eat veggie but occasionally fish so make fish pie, baked fish with HM oven chips
for the meat eaters I make chciken wrapped in bacon stuffed with philly, but you can use other things for dairy free.
We eat loads of veg so I also make soup, veggie bakes or just use them to pad out meals0 -
Potatoes... lots of potatoes! Egg dishes, like quiche but without the pastry (there's a name for it), omelettes. Quinoa, rice and millet are all worth a try as they are gluten free.
Simple meals of meat, veg and potatoes in various forms. Ham, egg and chips, soups, bolognese with veggies instead of spaghetti...
If you do want gluten free stuff cheap I used to buy a lot of out of date gluten free pasta from Approved Foods...June Grocery Challenge £493.33/£500 July £/£500

I'm suppose to eat gluten free and I'm trying to reduce my carb intake in general. I'm mainly good but I do slip sometimes (and regret it when I do). Baking wise I use Dove Farm flour, they have a lot of recipes on their site here . Thanks guys, the crust less egg bake sounds great- is it like frittata? I make frittata in silicone cke cases for the kids. I might do the same for myself

Cold risotto is nice for lunch. I had that today.
Also, chickpeas provide some carbs. Use them instead of potatoes with a salad. In the same way, you can use mashed butter beans instead of mashed potato. It's more expensive but worth it for a change.
