Here are some ideas for desserts....
CHEAT'S FRUIT BRULEE
Take a can of peaches in natural juice and drain. Spoon peaches into ovenproof ramekin dishes and top with fromage frais. Level, before putting some demerara sugar on top of each ramekin. Place under a very hot grill until the sugar caramelises.
QUICK PUD
Divide 225g (8ozs) raspberries between 4 ramekins. Lightly whip 300ml (10fl ozs) double cream and fold in 300ml (10fl ozs) of Greek yogurt. Spoon over the raspberries and chill in the fridge for 2 hours (you could have some you've made earlier in the fridge ready for the next stage!) Sprinkle 2tbsp brown sugar over the top of each ramekin and grill 1 min until caramelised.
BLUEBERRY PANCAKES
100g self-raising flour
2 tbsp caster sugar
1 egg, beaten
125ml milk (might need a bit more)
100g fresh or frozen blueberries
Oil for frying
1 - Mix the flour and sugar in a bowl. Make a well in the centre and stir in the beaten egg and the milk until you get a smooth batter (use a whisk to get rid of any lumps) Gently stir in the blueberries.
2 - Drop spoonfuls of the mixture into a lightly greased frying pan.
3 - Fry the pancakes about 2 -3 minutes each side until golden brown. Keep the pancakes warm until all the mixture is used (Makes about 12 pancakes)
4 - Serve warm pancakes with vanilla ice cream.0 -
Tuscan Bean Stew
1 tin kidney beans, drained
1 tin canellini or borlotti beans (both taste different to me, so it makes a nice change) drained
1 tin most value baked beans, rinsed of sauce
1 tin tomatoes
1 large onion chopped
2/3 garlic cloves crushed
oregano (personally I prefer basil)
stock
tom puree
a few spuds peeled and cut into 2" chunks
Heat some olive oil in a casserole, sweat (ie cook on low) the onion and garlic til softened. Rinse off all the beans then chuck the contents of all the tins in the pan. Add the potatoes. Add enough stock to just cover everything. Add two good tablespoons of tomato puree, a good few pinches of herbs, salt and pepper. Bring to the boil and then simmer until the potatoes are done and the sauce is thick.
This is a recipe posted by Pauliegirl a while back and serves about 4 people for an estimated £1.50. And cooks in well under an hour. And is an absolutely idiot proof recipe.
I also think you should do something with apples for a dessert to make the point about seasonal and local produce being cheaper - Gordon'll like that. Personally I'd go for an apple cake, perhaps with custard. I have one in the oven at the minute although I haven't tried it yet myself, it's a recipe my mum gave me - if it's good I'll come back and postThough I would endorse the apple crumble recipe from earlier if you know how to 'rub in' (it's not hard though)

I have to say that my quick easy meal always is something ...... mornay.
This involves white sauce, pasta, whatever cheap fish you're able to source and vegetables chucked in.
Put the pasta on to cook as usual.
I use milk and pasta and sometimes some cheese sometimes just herbs to make the sauce. Thicken with a little cornflour.
Add the fish to the white sauce.
Depending on the veg you are using and their cooking times, add either to the white sauce to soften or the pasta to cook.
When the pasta is cooked, drain the pasta and mix with the sauce.
Don't overcook the veggies and you will have a lovely vibrant meal.
If I'm really skint or short of time then I won't add fish.
A nice quick and cheap pudding would be a syrup sponge.
3 tablespoons syrup (if you put the metal spoon in a cup of boiling water first, you can get the syrup off easier).
100g SR flour
50g shredded suet (use veggie)
50g sugar (ought to be caster but I use granulated- it's cheaper)
1 egg
2 tbsp water
4 tbsp milk
Pour syrup into bottom of greased 1L pudding basin. Mix dry ingredients together. Mix wet together. Gradually add wet to dry making sure that the only lumps are suet. Gently pour it all into the pudding bowl. Cover tightly with cling film (not tin foil!) Cook on high for 2 minutes. Remove cling film (cover your hands because the steam will burn and you'll look like a t*t) and leave for 1 minute. Cook for another 2 minutes.
Leave to stand for a couple of minutes and then serve. I would love to work on ethics, all the time when purchasing anything. Due to health probs I / we need to cut costs.

How about a homemade soup like sweet potatoe and red onion, followed by a pasta dish, like roast tomatoes and garlic all very cheap, then as every one says a few baking apples stewed with a bit of crumble with cream or ice cream.
All for easy under a fiver.
