My father in law is diabetic and is having christmas dinner with us. I am cooking for 9 altogether and I'm already serving christmas pudding and chocolate steam pudding with cream or custard, followed by nice homemade mince pies with coffee. However, my poor father in law always ends up with fruit salad when he goes out for dinner which is very boring for him.
I would like to make a pudding that is easy to make before hand that can be heated up and served...but i can't find one that looks nice.
I have found recipes with some strange ingredients in which i know i will never use again which would be a waste of money.
Any ideas I would be extremely grateful0 -
My DH was diagnosed with diabetes last year so I bought a cookbook from Diabetes called "Coping with Christmas and other celebrations", but one
of the first thngs it said was that Christmas is basically a time you should give yourself a day off from the usual diabetic diet , and most of the recipes are the same as ordinary onesThough he won't be going overboard on Pud, cream or mince pies, but he will have some! Our DD is on a low-fat diet too, so I'm going to get whipping cream as it's lower in fat than double cream but tastes much nicer than single

bbc health web site has a recipe for diabetic friendly Christmas pudding (sorry but do not know how to "do" links).

Actually you can find as much sugar in some fruit as you can in puds. I shall be having a bit of Xmas pud, with a small amount of cream - my recipe for Xmas pudding doesn't make it all that sweet anyway, but the last thing I want is for anyone to go to the trouble of making something special just for me. It's a special day so I'll be eating just the same as everyone else - just less of it !!0
