Yes, the different revisions of the processor allow for different overclocks, but if you want the max you'll pay a premium because they're usually more difficult to get hold of.

But i thought that, in all circumstances, overclocking voids the warranty?

It depends, some manufacturers state a ± tolerance that they will still accept under warranty, but more commonly is that any modification will invalidate the warranty.
