  • Tarragon is gorgeous with chicken. Do a creamy sauce and add tarragon and your chicken leftovers - lovely pie filling!

    Tarragon is delicious with chicken, as are summer or winter savoury.

    If you start growing herbs then Tansy is quite a large plant useful for deterring insects from the house or for using in anti moth bags, but you can also use a spice like amount of the chopped leaf in cooking and it enhances chicken very much when used in this way.

    If you grow tarragon then choose the French sort rather than the Russian. It isn't quite as hardy but has much better flavour.

    Tarragon is lovely with chicken but I also use thyme or even better lemon thyme sometimes for a change.

    I generally use mixed herbs with my chicken, and a bit of garlic :)

    I had no idea you could eat tansy - what does it taste like, please, Seakay? I've got a big one growing just outside my patio doors in a (not very successful) attempt to keep the flies outside, but it had never occurred to me that it might have any other uses.

    Back on topic, I'd go with tarragon, too - chicken in a tarragon-y white sauce is a great favourite of mine. :drool: Sage is also nice but I prefer that in winter as it gives a sort of chicken-and-stuffing flavour to my mind. :drool: (I'm a bit peckish at present - does it show? :o;))

    I agree tarragon with chicken or sage or thyme plus if you are making a pie I also like to add a handful of chopped red peppers or even a few tiny bits of chilli finely chopped to give it a bit of a kick
