a kilo of honey

I have acquired a kilo of honey. What do I do with it? I don't like it on my porridge or in hot drinks.

    Couldn't resist that one, sorry.

    It can be used as the sweet constituent of pretty much any sweet and sour sauce or barbeque sauce. that way it also tends to get well hidden :)

    Or you could try;

    Honey Oat Biscuits

    125gm butter, softened
    1/2 cup sugar
    2tbsp honey
    1 cup plain flour
    1tsp baking powder
    1/2tsp cinnamon
    1 1/2 cups rolledoats

    Cream together butter, sugar and honey until pale. Sift flour, baking powder and cinnamon together and add with rolled oats to creamed mixture. Mix together then roll tablespoons full of mixture into balls. Place on greased oven tray. Flatten with a floured fork and bake at 180 degrees for 15 mins or until golden. Transfer to wire rackto cool.

    Honey Snaps

    50gm butter
    2tbsp sugar
    3tbsp honey
    1/2 cup plain flour
    1tsp baking powder
    1/2tsp ground ginger

    Melt butter, sugar and honey together in saucepan. Remove from heat. Ad flour, baking powder, ginger andstir until mixture is smooth.Drop teaspoon lots onto a cold oven tray, leaving enough room for mixture to spread. It doubles in size. Bake at 180 degrees for 10 mins or until golden. Leave on tray a few mintues to cool before moving to wire rack.

    Sorry, I've got to ask - how did you come to acquire a kilo of honey you didn't even want? Did it turn up in a delivery of organic veg or something? Or did someone offer it to you and it seemed a shame to turn it down, knowing there are so many clever people on here who can tell you how to use it? :D

    Or this one, its REALLY yummy and uses a cup of honey at a time.

    Honey Cake

    1 cup honey
    1 cup water
    1 1/2 cups chopped dates
    50gm butter
    1tsp vanilla essence
    2 cups plain flour
    4tsp baking powder

    Put honey, water, dates and butter in asaucepan. Stirconstantlyover a medium heat until butter has melted.Remove from heat and allow tocool. Stirin vanilla. Sift flour and baking powder into the saucepan and stir to combine.Pour mixture into a greased and lined 20cm round cake tin. Bakeat 180 degrees for 45 minutes or until cake springs back to touch. Leave in tin for 10 minutes before turning out onto wire rack to cool. When cold dust with icing sugar or serve as a dessert with whipped cream or caramel sauce (recipe to follow).

    Caramel Sauce

    125gm butter
    3/4 cup brown sugar
    1 1/2 tbap cornflour
    1 cup water
    1tbsp golden syrup
    1/2 cup cream

    Melt butter and sugar in saucepan, stirring constantly until sugar dissolves. Boil for 3 mintues, stirring occasionally. Remove from heat. In a bowl combine the cornflour, water and golden syrup until smotth. Add to saucepan. Bring mixture backto boil, stirring constantly. Boil for 2 minutes. Remove from heat and stir in cream. Makes about 2 cups.

    Unfortunately from the same place as the candy striped sheets - my fiancé's grandpa died last month and we have been over to clear some stuff out of his house. Don't like throwing food away;)

    Mead? Have yet to have a go myself but it will see off a kilo of honey pretty easily and if you are really concerned by the taste (though mead doesn't necessarily strongly taste of honey in my limited experience) you could add herbs/fruits to it. I don't know if there have been recipes on MSE but there is a thread here with a few recipes in it on our site: http://forum.downsizer.net/viewtopic.php?t=2778

    I've used the best part of 1/4 lb this weekend making honey and lemon drinks as I have a cold _pale_
