You may be able to 'barter' for a good deal on a privately-owned self-catering cottage as opposed to a caravan type holiday, particularly now everyone is feeling the pinch.
I would recommend the following sites
www.lastminute-cottages.co.uk/ - why not be cheeky and make anyone with a cottage available an offer
www.therealvisitorsbook.co.uk - list availability of cottages on their 'real deals' pages of latest availablity, with the bonus that all the cottages have been recommended by recent paying guests, rather than simply owners advertising their cottages for rent
www.underthethatch.co.uk - quite pricey but have a good ethic of reducing the prices of their holidays as the 'vacant date' gets closer - definitely worth a look
e-bay is now a good source - just check them out on trip advisor, real visitors book, holiday truths etc.
Only caution I would add re Butlins etc is i've heard that everything comes as an 'extra' which have to be paid for, which makes a cheap looking holiday suddenly very expensive.

I can recommend two Parkdean sites-Ruda in North Devon and Challaborough in the South Hams. Had two good holidays at both sites and both are located a five minute walk from beautiful Blue Flag beaches-Croyde at Ruda and Bigbury on Sea at Challaborough.
