Hi, as my bread maker is well and truly dusted off and producing bread at rate of knots :T, I thought today I would have an attempt at the pizza dough. I would love to have a go at making the stuffed crust varieties that you get in Pizza Hut etc, but I have absolutely no idea where to start. Does anyone have any hints and tips please.

Make a large pizza base. Sprinkle/place cheese 1/2 inch from the edge then fold the edge over the cheese.

Thanks for that Skint Cat, its really quite obvious when you think about it, does it happily stay in place once you fold the dough over or do you have to 'stick' it with something (milk, egg etc).0 -

I made my first pizza last night turned out well and was loved by all but I did think it would be lush if we could have stuff crusts. So now i knowKind Regards

i sawa guy on the tv he made the dough and then got some of the cheese strings put then all around the edge folded over then made pizza havent tried it yet thou !0 -
Hmmm its that simple. My worry was always that the edge would unfold and the stuffed crust would disappear!
I might try that next time though.

The trick is to press down about 3/4" around the edge with your finger so the dough around the edge is half as thick as the main pizza (creating a "step" around the edge). It then folds easier, stays folded and also becomes all chewy like Pizza Hut pizzas

As per obukit or do as you would do ont he edge of a pie - use the prongs of a fork to 'bind' the foldover and the base together - leaves fork marks but I doubt anyone would worry!0

I have been doing home made pizza recently. What cheese do people use on pizzas? I have been using mozarella (sp) I have found before that normal chedder is very oily. Is it best just to use all mozarella or are there other cheeses I could use?

Mozzarella is the traditional cheese topping for pizza.
By the way, the 'stuffed crust' pizza variety is called Calzone. If you google Calzone you will find lots of stuffing ideas and how to bake it properly.Be careful who you open up to. Today it's ears, tomorrow it's mouth.0 -
ive made stuffed crust pizza with kids at school and we used cheese strings for the crust......we put it down and flipped over dough having first put some egg on to stick it down....u can wrap the string (cheese) with bits of pepperoni and do same if u like that....u can also sprinkle herbs or chilli over cheese before u seal itonwards and upwards0
