I did a stuffed crust with garlic and herb philly .. yum .. what i did was used a disposable piping bag and piped the philly about 1" or so from the edge and the folded over and topped it with lots of italian/polish meats from aldi's the a usual tom & mozzeralla base ..

How many grams of Philly do you think I would need for a pizza the size of Goodfella's?

I suppose any type of tin would do - cake tin for example, shallow kind? I don't own a pizza tin and don't want to buy one. Great ideas btw :D

    Thanks

I use about 100g and a 13inch pizza tin (don't know the size of Goodfellas)

I've done this with some large rectangular tins (13" x 17") when I've needed larger quantities. I find the edge of the tin makes it easier for me to fill and roll and would imagine any shallow tin should work, for example sandwich cake tins. The only advantage of a pizza tin is the base is full of holes so in theory the bottom crisps better.

As I said upthread, I use a teaspoon, but will have to try brogusblue's method of piping it.
