I would tend to recommend using a modem and some fax software for sending faxes, but using a Fax2Email service to receive them. That way you don't have to mess around with voice/fax switches or having a separate phone line for faxes.
For receiving faxes by email Gradwell is a good option (http://www.gradwell.com/voip/fax/fax2email/) - for £3 a month you get a geographical UK fax number in the area code of your choice. They can also port a number from BT if you have an existing fax number that you want to keep.
There are various companies offering free incoming fax services with an 0870/0871 number, but I'd hesitate to recommend these for a business.
Sending faxes by email is also possible. The Gradwell system is expensive (20p per page) so I would not suggest this unless you only want to send a very small number of faxes. Something like FaxTastic (http://www.faxtastic.co.uk/view/info/pricing/) might be OK, although I haven't used them. They charge £30 per year for the incoming number and at most 10p per page for sending.
However, I would stick with my original recommendation of sending faxes using fax software and a modem. You get much more flexibility with how the fax is laid out, and it probably works out cheaper as well.Let's settle this like gentlemen: armed with heavy sticks
