The only differences between the two seem to be:
Interface type: ATA-133 (Hitachi) and ATA-100 (Seagate)
Seek Time: 8.5ms (Hitachi) and 11ms (Seagate)
    Are they both compatible?
What about fitting - will they be easy? And will they need formatting or something?

So pick one with a similar spec. to the existing one. I did say that you would get varying opinions regarding the manufacturer!

Yeah, I never had any particular problems with Seagate. Certainly no more than any other brand anyway and I must have bought between 7 and 8 thousand drives over the 20 odd years I was buying that sort of stuff before I retired, (a couple of years ago now). Have they got noticeably worse since then? Hmmm... possible I suppose, but I doubt it.

More to the point there returns procedure was better than many of the others. Well, again.. up till a couple of years ago, anyway.

Always use the cheapest parts they can source I guess, like anyone else. I would not use them if you gave 'em to me. I have much better taste than you, thats all.
