I used to make chocolate cheescake buns. You make a chocolate muffin batter and a separate soft cheese and icing sugar with a drop of vanilla essence mix. Put some batter in the bottom, a blob of cheesecake mix on top and then some more batter. You get chocolate muffins which when you bite into them have a cheescake type icing in the middle. These also freeze well. I usually dust with icing sugar but you could manage without.
