well it's not a cooked cuke recipe but it is lovely

thinly slice cucumbers and some onions and layer in a glass casserole dish or bowl (don't use metal!) then in another bowl mix greek yogurt (could use plain but the greek yogurt is a good substitute for american style sour cream and regular yogurt isn't really as nice) anyway put the yogurt in the bowl mix in either garlic puree, finely chopped garlic or garlic granules to taste. feel free to toss in a few freshly chopped herbs too like thyme or a bit of basil to taste and a touch of salt. mix this well and mix in some vinegar to thin it out, pour over the cukes and onions and allow to marinade at least overnight.

you'll need a bowl to eat these (the marinade is too nice NOT to eat!) but they are soooooo tasty and very refreshing on a warm summer evening

I don't even have one cucumber to eat up but I am drooling at the thought of this!

I did a "Stuffed Cue" once..trying to think how I did it...but know I found the recipe in a veggie cook book in the library. Got a feeling the filling was chopped toms, onion & peppers & think it might have involved boiled rice too--cue cut in half length-ways & seeds scooped out, filling in, wrapped in foil & essentially dropped into a pan of water for x time. We had half a cue each as I recall, for a main course meal.
I didn't mind it as it came out a bit like marrow but the offspring were not keen to say the least :o Maybe google the recipes for marrow & adapting them could be an option?

it's so exciting isn't it? we've got around a dozen pea pods right now and we keep going out each day to see if they are fattening up (not fast enough i can tell you that!) we've also got flowers on our tomatoes right now but we're still eagerly awaiting them to actually become tomatoes yet

this is the time to start giving your toms weekly feeds. i made up a lovely mix *coughs* of grass, some veg waste, coffee grounds, tea bags, egg shells and water and left it soaking in a big 3 litre container on my warm kitchen window sill for about a week now. when the tomatoes start popping up i'll dilute the mix in a bucket of water (should be the colour of very weak tea i'm told) and then water the toms well with that.

then i'll make up a similar concoction and let it stew for a week til the next feed. also make sure you've gone out and pinched out any of the tiny shoots that are forming in the v portion of the main branches/leaves of the plant, no point wasting energy feeding those now you want to leave only the main upper portions of the plant that will form trusses of toms.

good luck with those, i know how excited you must feel! we've had flowers on ours for a week but no toms yet...fingers crossed!

On a different topic - anyone know what else to do with cucumber besides cucumber sandwiches or chucking a few bits in a salad purlease?

    QUOTE]

I don't know any recipes for cooked cucumber, but here's one for a quick cold soup. I find it does 2 people as a main course or 3/4 as a starter.

Peel 1 cucumber, remove seeds and roughly chop. (I leave the seeds in but it gives a lumpy texture)

Peel and remove stone of 1 avocado pear and roughly chop.

Place cucumber and avocado in blender with a splash of water (you can always add more later if needed).

Add a handful of fresh mint leaves

    Blend until smooth.

Add a squeeze or 2 of lemon juice.

    Serve.

I like it with a slice of ryebread toast (I don't eat wheat!)

Hi guys, I'm going to join this thread as I'm TTC again. DS took me nine months :S but I was so stressed and really unhealthy. I'm stocking up on wholemeal pasta and rice, plus I'm trying to grow my own veggies (have been eating lettuce from the back yard already). Do you guys know how to start off elderflowers in your garden? I'm really tempted by the elderflower cordial recipies (I've heard elderflower drinks are a good substitude for wine).

as i was throwing left over lettuce/tomato/peppers/carrot etc from salads in the pot for pasta sauce/soup that i make most weeks, i have been throwing the cucumber in there as well!

i just blitz it all together once cooked, and i haven't noticed it! no idea if it adds anything to the nutritional value of sauce, but i don't like throwing anything away!

Specifically - I'm thinking "well if its possible to cook lettuce - then there must be ways to cook cucumber". So - if anyone knows of any recipes featuring cooked cucumber (suitable for a vegetarian) 'twould be appreciated.

I've had a look on the Good Food site. I just put in Cucumber and it came up with lots of recipes, most of them not veggie, mainly lots of different salad type ideas.

an interesting chutney with mango that sounds nice (close your eyes when you see the salmon part Ceridwen!)
    http://www.bbcgoodfood.com/recipes/7586/tandoori-salmon-with-spicy-mango-and-cucumber-chut

a spicy cucumber salad which sounds great
    http://www.bbcgoodfood.com/recipes/4393/spicy-cucumber-salad

a veggie recipe for Asian style tofu and cucumber noodles
    http://www.bbcgoodfood.com/recipes/4014/asianstyle-tofu-and-cucumber-noodles

a watercress, cucumber and radish salad
    http://www.bbcgoodfood.com/recipes/2416/crunchy-watercress-cucumber-and-radish-salad

    a cucumber and yogurt soup
    http://www.bbcgoodfood.com/recipes/2666/fragrant-cucumber-and-yogurt-soup

cucumber with soured cream and dill
    http://www.bbcgoodfood.com/recipes/4589/cucumber-with-soured-cream-and-dill

then on this site http://www.cookitsimply.com/category-0020-019q3.html there are lots of recipes,

including this one for stir fried cucumbers with soya bean curd
    http://www.cookitsimply.com/recipe-0010-0c2100.htm

this one for hot cucumber salad with dill and capers
    http://www.cookitsimply.com/recipe-0010-020r88.html

and this one for cucumber and cheese mousse. It has non-veggie things in it like gelatine and chicken stock, but could easily be adapted
    http://www.cookitsimply.com/recipe-0010-020r88.html

I am quite fancying something with cucumbers now!!

got some fruit and veg from the greengrocer yesterday and had a look at the cheapy box, as I have got in the habit of doing.

There was an entire cardboard box of huge extremely ripe vine tomatoes, not with any bad bits, just a bit squashy. I got a whole carrier bag full of them for 20p a pound (about 44p a kilo)!! Have just made a huge pan of tomato sauce for pasta with basil from the garden, and still have loads left for fresh tomato soup, roasted tomatoes etc etc.

OH had some fried with the carrot and chickpea burgers I posted about earlier, he really likes those. Have found another veggie type burger I want to try, but have got all these toms to use up now.

The new recipe is Cheesy veggie burgers, with leeks, pinto beans, cheese and mushrooms in. Sounds delicious, I'll try them in a day or two
