morning everyone!
the salad last night was delicious and gorgeous looking too, sadly though i got started too late and was being groaned at so i didn't get a picture but really it was a site to behold!
the wee one was quite thrilled with the idea of eating it however she picked away at it. if only she'd take a bit of salad dressing, i don't find these new items completely palatable dry and by themselves (which is really how she eats them) but chopped and mixed in with other salad fixings and a small bit of dressing they are lovely...oh well i'll have to work on that one for her. to her credit she ate them without complaint just took ages
i forgot to mention yesterday that she helped me reorganise our food cupboards and we got most of our food inventory sheets filled in and taped up inside the corresponding cupboard door. today she proudly ticked off the cereal bar she took from the cupboard and reminded me to do so as well!
i have a few programs i want to try where i can enter my kitchen inventory and they will help me find recipes for using them, i'll let you know how i get on with those.
today we will hopefully get to working on the compost bin. we might have a trip into town though, i may have finally nailed down a time to meet up with a freecycler that has agree to bring a bike for the wee one (well IF she shows up, she's been a little non committal so i've not told my wee one so i don't get her hopes up) if that does happen today i suspect the compost heap will get tossed by the way side

thanks weezl, that's really useful... is a fifth of a can of tomatoes really a portion? I always kind of imagined it would be about half a can, so that's made me very pleased!weaving through the chaos...0 -

I had also forgotten about onions and am pleased as I put a tin of tomatoes and at least one onion in most things that I cook :rotfl: We're finishing off the lentil soup for lunch today & having beans & scrambled egg on toast, followed by a fruit salad that I made this morning, for tea so we'll be ok.
It's nice to know how much a portion actually is. I have a print out somewhere that I did years ago I'll go and dig it out0 -

also, yep, only 1/5th of a can as it's only 80g of tinned veg to a portion, same for fresh, and only 20g of dried
I'd love to write more but am a bit zonked as have been to 2 mum and baby events and walked 10 miles :eek:
oh and I'm still handwashing!!!!

On a different topic - anyone know what else to do with cucumber besides cucumber sandwiches or chucking a few bits in a salad purlease?
Specifically - I'm thinking "well if its possible to cook lettuce - then there must be ways to cook cucumber". So - if anyone knows of any recipes featuring cooked cucumber (suitable for a vegetarian) 'twould be appreciated.0 -

how about a nice rasiki (sp)dip? Especailly if you have any mint growing-im v proud of my mint took a cutting from a garden a few yrs ago and now its the only thing thats growing well in my yard! I chuck it in just about anything!0

well it's not a cooked cuke recipe but it is lovely
thinly slice cucumbers and some onions and layer in a glass casserole dish or bowl (don't use metal!) then in another bowl mix greek yogurt (could use plain but the greek yogurt is a good substitute for american style sour cream and regular yogurt isn't really as nice) anyway put the yogurt in the bowl mix in either garlic puree, finely chopped garlic or garlic granules to taste. feel free to toss in a few freshly chopped herbs too like thyme or a bit of basil to taste and a touch of salt. mix this well and mix in some vinegar to thin it out, pour over the cukes and onions and allow to marinade at least overnight.
you'll need a bowl to eat these (the marinade is too nice NOT to eat!) but they are soooooo tasty and very refreshing on a warm summer evening0 -
naughty teasing weezl!! Funny you should mention the wine though!! Alas I had a wee disaster! Problem was the peach wine...mixed the peaches, whized em and added ye olde ingredients and then put then in teh bin for 24 hrs followed by decanting to the demijohn...all fine and bubbling gently until the next day when a large bang erupts from kitchen...alas...a fine arc/spray of fermented peaches all over the compact and bijoux kitchen...have restrained and rebottled but the moral is strain well!!
So far have 1 ribena wine; 1 merlot, 1 chai, 1 peach and 1 blackcurrant, ginseng and vanilla...am sipping a red wine cos I need the bottle! The strawberry vodka is yummy - as is the limoncello and rasperry vodka!! nom nom!!Nerd no 109 Long haulers supporters DFW #1! Even in the darkest moments, love and hope are always possible.0
