Morning all
I will be making my first batch of mince pies tomorrow and was thinking about my moms pastry.
She used to make such lovely pastry that every christmas she would take in orders for local people and make up to 100 dozen pies in the week before Christmas.
Of course back then i wasnt really interested and idiot that i am, i never got her pastry recipe.
However i seem to remember that she used to put a bit of vinegar in the mix. Does anyone else do this or know of it?
All i know is that my pastry is nowehere near as buttery or short or light as hers always was.
any suggestions warmly welcomed!

Never heard of vinegar in pastry... but definitaly sounds right for Old Style!
My only trick with pastry is don't knead too much, it becomes elastic and chewy.
I thought (but can't remember for a fact) that replacing a bit of flour with cornflour can make it lighter. (no more than 1/5 though...)I lost my job as a cricket commentator for saying “I don’t want to bore you with the details”.Milton Jones0 -
I do not know about vinegar in pastry but an elderly relative used to put a splash of vinegar in batter mix for yorkshire puddings to make them crispy."This site is addictive!"
