leftover porridge - any ideas?

    Tobys_mummy, I did this today. I had too much leftover from making apple raisin porridge in the slow cooker. I creamed just a couple of tablespoons of butter with about 2 tablespoons of brown sugar and 2 of white sugar (the porridge was already pretty sweet from the raisins and apple). I added the porridge and then about a handful of flour and an egg. Mixed it with the electric beaters and pressed it into a greased tin. I then drizzled a little bit of golden syrup over it, very little. I think I baked it for about 20 minutes in a medium oven. They tasted lovely, but were still pretty floppy, next time I would add more flour to see if that firmed them up more.
