Try bunging in a peeled and quartered potato and cook until potato cooked, then liquidise.

I often use leftover veggies as the basis for a minestrone - all chopped and sweated along with some garlic and finely chopped bacon / chorizo / salami etc if I have any bits hanging about in the fridge.
Add a tin of chopped tomatoes / passatta etc, plus some broken pasta pieces (all the bits that tend to get left at the bottom of the bag) and/or tinned beans like cannelini/borlotti etc. Stock etc added to get the right consistency.
A real hotch-potch of bits, different every time !
Amazingly, my 'I hate veg' DD1 loves this and actually asks me to make it on occasion !
A real 'bottom of the fridge' soup. The actual soup liquid is liquid - doesn't need thickening - but it's so chock-full of chunky veg and flavour, you feel like you've really had a meal.
Unless you're DD1, and then it's just a snack / starter.0 -

hi
ive just made spicy butternut squash and sweet potato soup.
unfortunately, i have went a bit too heavy handed on the chilli, and also have let it reduce for too long (thinking i put the timer on, but didnt!) .....anyone have any ideas as to how i could thin it out a tad and also cool the spicyness down or have i lost it completely!!
i like spicy stuff, but i know the soup would be much nicer without as much of a zing to it!

stock to thin it out and double cream, yoghurt etc to take away the heat.
