How do you cook perfect rice?

an arabic friend of mine taught me to make rice and its fool proof and so easy.
he adds spices and some arabic ingediants but it works with plain basmati rice
1. 1 basmati rice to 2 water
2. cover with a tight fitting lid and boil for five minutes
3. turn off the heat or if youre on gas down to the lowest setting
4. leave for 20 minutes
DON'T BE TEMPTED TO TAKE THE LID OFF AND STIR JUST LEAVE IT TO.
This doesnt work so well with other rice but its perfect for basmati.
if you dont have a tight fitting lid cover with foil.

Tried and tested recipe that is fool proof ( I know because I do it!!)
Put a dash of olive oil in a pan, add 1 cup of rice ( this is enough for 2 so alter quantities to suit) and give it a good stir making sure all the rice is covered but do not burn. Add 1 and a half cups of cold water and bring to the boil. Turn down so that rice is simmering - you must have lid on for the rest of this recipe and DO NOT take the lid off until you are ready to serve! Simmer for 10 mins then turn off heat. STILL DO NOT REMOVE LID! Leave for a further 10 minutes then remove lid and give a good stir - perfect fluffly rice with no water left in pan everytime. I sometimes add turmeric, cumin seeds, salt, ginger and coriander leaf before the water to make pilau rice which is delicious. Also you can make scrambled egg in a pan the add to the rice with a few peas and chopped spring onion for egg fried rice. Enjoy x:coffee: Jules xxx

Use, by volume, twice as much water as rice.
In small quantities, rice is, for all intents and purposes, the same weight in grams as its volume in millilitres.
So, for one person, use 75g of rice and 150ml of water.

Hi,
I can cook most things, bake , make bread but rice eludes me!! I just end up with a lump of stodge1! I have tried over the last 24 years since being with DH.

How do YOU actually cook it?
It sounds like its being over cooked.
what i do is:
Bring a pan of water to the boil
add a little salt
Pour in the rice
Stir
Turn heat down to very low
Put lid on and leave it for 10 mins.0 -
You're buying the wrong variety.
1. Buy Basmati instead of nasty American long grain stuff.
2. Wash one cup-full in a sieve to get rid of any excess starch. (I don't usually bother washing, but it's less sticky if you do.)
3. Put into a cold pan with 2 cup-fulls of cold water and a dash of salt.
4. Bring to the boil.
5. As soon as it's boiling, put on a tight fitting lid (or tin foil) and simmer at the lowest heat for 10 mins.
6. Leave to rest for another 5 mins to absorb any excess water.
7. Eat lovely fluffy rice.

I don't put the lid on just boil then rinse with boiling water as soon as it's ready to eat.0

I swear by Delias method and use basmati
put 1 cup rice in pan
add 2 cups boiling water
bring back to the boil and stir once
put the lid on tight and turn the heat down as low as you can
Wait 10-12 minutes (depends on you individual cooker and pan)
Don't stir, don't lift the lid before time and don't add more water!
When you lift the lid it is cooked when it looks dry and there is no excess liquid at the bottom.
Fluffy rice and no draining, honest!0
