    Yes you can freeze rice - but cool it very quickly after cooking, under running water in a colander before doing so.

    Hi keza,

    Left over rice can contain a nasty bacteria ( bacillus cerius) so you need to be careful and make sure it's chilled quickly after cooking and kept cold in the fridge or frozen. If you intend to reheat it, always make sure it's piping hot before serving.

    Saying that, I have been freezing and reheating left over rice for years with no problems.

  • Hoping someone can help with this. I know you have to be careful about freezing/defrosting rice as a thing on its own but what happens if you use it as an ingredient in a dish? I was lucky enough recently to snag some Covent Garden Moroccean Tagine soup at 60p carton instead of the £2.20 usual price. We absolutely loved it and I want to have a go at making some. It had lentils, tomatoes, harissa paste and rice in it. I like to make monster pot of soup and freeze excess but I've never frozen anything with rice in it like this before. Will it be OK? Thanks.

    Should be fine really. I freeze cooked rice either on its own or mixed with other things all the time (and have been doing so for many years) without any issues.

    freezing is fine as long as you freeze as soon as its cooled and when reheating after defrosting you get it really bubbling hot so it burns out any possible contamination hope this helps karen
  • Thanks! I will def have a go at this as it was fab soup, really warming and chunky. Never used harissa paste before so that will be a voyage of discovery too! Might get OH to taste it first ............ but then again, his tastebuds are practically burnt out due to years of takeaways when he was working away from home!

    I love harissa :) you can make a simple version with the following: 6 to 8 dried chili peppers, 2 cloves of garlic, cumin powder, ground coriander seeds, salt and olive oil.

    Remove the seeds from the chili and soak them in warm to hot water for about 30 minutes to soften them, then squeeze the water out and dry them
    Chuck the chilis in the blender with the 2 cloves of garlic, a good pinch of salt, half a teaspon of ground cumin, half a teaspon of ground coriander seeds and half a glass of olive oil. Mix until you get a paste.

    Can anyone help ive just made dolmas (lamb mince, onion, rice, parsley, tomato puree mixture) can i put this mix in the freezer to keep for next time as i made too much, just not sure about the rice freezing well, any help appreciated.
