Bolognese takes me longer too. But i can do a plethora in lovely pasta dishes in as long as it takes the kettle to boil and the pasta to cook, so well under quarter of and hour...it just means being very aware of time/motion, getting the longer cooking parts of a sauce on while kettle boils for example.
Pan fried fish with rice and veg or salad is something else that can be done in about the same time it takes kids to come in, get changed/wash hands, take bag to room and unpack prep and lay the table ....;)
Ham ...either bought or cooked at home at a weekend, can make a meal in the week....with boiled new poratoes and salad, with a baked potato ( might take a while if you oven it, but does not involve you for a long time at the ho or chopping board), in a pasta sauce, as a pizza topping...or as part of a ploughmans spread, or in a risotto....for dats when you do nor mind some hob time...e,g, while helping kids do prep at the table with you in the kitchen.
Otherwise, loads and loads of chicken recipes could suit you, and agree, summer months make it easier.....meat/ fish with salad or even cold meat w. salad.0 -
I'm quite concerned that I'm making bolognese wrong, now?
I just chop a couple of onions, start them browning while I chop some mushrooms...chuck the mince in, chop some carrots/misc filler veg, drain the fat from the mince, add the rest of the veg, some tinned tomatoes, squirt of tomato pur!e and some herbs...Maybe takes 10 minutes? Then I just leave it to simmer for an hour or two...5mins to boil some quick cook spaghetti at the end.0 -
hi, i made a huge pot of bolognese? mix in the slow cooker yesterday, i whizzed up two carrots stick of celery & two onions with 5 garlic cloves and some fresh herbs. tipped into slow cooker and added a pack of quorn mince, some oats, salt pepper, mixed herbs and two tubs of passata, prep took 5-6 mins, left it on low all day. took some out later. half i layered with lasagna sheets and topped with cheese sauce. the other i topped with cheesy mash as a cottage type pie. i added chilli powder, ground cumin & corriander and kidney beans to what was left in the slow cooker. three different meals in all about 35 minutes. hope it might help. dont know exact quantities sorry i tend to add until it looks right.Grocery Challenge 24th Feb-28 Dec 2012 £2000/£1404

less a recipe more a cooking method IYSWIM. I find it invaluable when I don't have the time or energy to stand over the stove.
Use 150g rice and add 300ml liquid for 2 people. Any kind of rice - basmati, long grain, arborio for risotto or paella. You can add chopped veggies, meat and whatever seasoning. The liquid can be water, stock, wine, blended tomatoes. The principle is the same.
for example - chicken biryani - mix some chopped onion, carrots, peppers to 150g basmati rice, mix in some curry powder. Put in a casserole dish with a tight fitting lid, (or foil) and pour over 300ml chicken stock. Cover the dish and cook for 20 mins Gas 5 (180 degrees??) add some cooked chicken, frozen peas. cook another 5 mins or until the water has absorbed. pour over curry sauce to serve.0 -
Work days are worse. I get up at 6.30am ish to get myself ready while OH gets the little one ready and then we have to be out the door by 7.10am. Then I'm home with the little one at 6.10pm ish and I like to spend half an hour playing then while the little one's bath is ready I'm running around like a loon tidying while OH cooks us something (usually something processed and frozen which I hate and barely eat) and getting the little's one PJs etc. ready and feeding her some supper. Then by the time she's in bed and bathed it's 7.30pm, we eat our dinner and then take turns to shower/bath, do the dishes, get our work stuff ready for the next day and the little one's bag, meals etc. ready and it's usually 9pm and I just cannot be bothered to prepare for the next day! I'm in bed by 9.30/10ish!

How about jacket potatoes? You can bung them in the oven and whilst they are cooking you can play with your daughter and get her bathed and ready for bed.
One of the favourites in our house which can be on the table in half an hour is salmon pasta. Cook a salmon fillet in foil in lemon juice, olive oil and black pepper for about 25 mins/200c, whilst that's cooking bring 2 pans of water to the boil and cook some broccoli and some pasta. They should all be ready at the same time, drain the pasta and broccoli, mix together, flake the salmon in, mix in a couple of tbsp of creme fraiche, season, add grated cheese and serve.It's not how far you fall - it's how high you bounce back.... :jHappiness is not a destination - it's a journey0 -
Yesterday I made spag bol in the slow cooker as we leave the house at 8.15 and I didnt get home till 4.30pm. It literally took me 5 mins to do the chopping of peppers and onion (no mushrooms). I browned the meat and drained the fat then threw everything in the slow cooker. Dirty pan, chopping board and knife went into the dishwasher. So quick and easy and I dont have much spare time in the morning but managed to get this done.

Hi due to a ME relapse (I am extremely tired) I need quick and easy meals. I tend to live on porridge when Im not well. Any one pot ideas would be lovely. Due to fuzzy brain I find it very difficult to follow recipes. Thank you for your help x0

A good idea would be to batch cook when you have energy so you have meals ready for when you don't. Homemade microwave meals
Otherwise
Pasta with soft cheese (like philly) is good with lots of pepper
Pasta with garlic mushrooms (fry mushrooms in butter/oil and add garlic in the last 2 mins so it doesn't burn) A good sprinkle of parsley is yummy too
Stirfry is quick and easy
Omelette - can add ham/veg etc - lots of variations
Homemade frozen pizza
Beans/grilled cheese/tomatoes (or other things) on toast
HM soup (can freeze portions)
If you have a slow cooker - chuck in meat, veggies and gravy into it and leave until evening. You could make some dumplings to throw in if you felt like it.
Cook a gammon joint, slice up thickly and serve one with parsley sauce and potatoes, veggies.
Risotto is easy and I rarely stand over it stirring but it is still fine.

You can pan fry fish in the same time as make a bowl of porridge. I would also consider things like raw fruit and veg with something like If you can make a jug of gazpacho in this weather you can just pour a glass through out the day.
Despite your exhaustion you need good nutrients. Porridge is fab, but you need fresh stuff too.
Google has lots of advice but its probably hard to find if you are shattered

Do you keep prepared vegetables in the freezer?
One I do when I'm shattered is to dump handfuls of frozen sliced potatoes, leeks, mushrooms, cabbage, onions or whatever you fancy into a skillet or shallow frying pan over a low heat, let them defrost and the liquid evaporate, add a little butter and fry them, add peas or sweetcorn at this point if you want, then stir in 2 beaten eggs and a dash of Worcester sauce.
If you have the energy do a couple of slices of bacon to have with it or have a slice of cooked meat if you have something like that in the fridge.0
