Need very very quick & easy recipes

    I would use one egg for egg fried rice and save the other.
    Just google agirlcalledjack for the blog, great recipes.

    You have 1800g of pasta so that should theoretically do at least a week's meals for two out of that. A jar of sauce will stretch to three meals each jar... so it looks like pasta and sauce all week!

    I would google potato cakes recipes... I don't know how to make them but I am pretty sure you could create something with mash, peas, sweetcorn and flour that might fry into tasty patties...

    Do you have oil or will you have to use the butter?

    When I saw your ingredients I did think about a quick bread and butter pudding recipe which i think is Jamie Olivers, (though not sure!) just butter your bread put some jam on cut into shapes to sit nicely in an oven proof dish sprinkle on some dried fruit and cover with custard, sprinkle on a bit of sugar and then you just put it in the oven til its bubbly and a bit caramelised on top.......it comes out nice when I make it though depending on the custard I do water it down a bit with some milk so it soaks in better like the more traditional method!

    I am going to make that pudding tonight it sounds delish & my hubby will be very very happy!

    You can make oven, skin on chips with both the potatoes and carrots (cut into chips, drizzle with olive oil and put in oven for about 30 mins, a bit less for the carrots).

    I would make corn cakes the same way as fish cakes with mash potato, an egg, sweet corn and seasoning. If you have any chilli flakes in your spices mix them in and fry up the patties - yummy!

    You have the pasta sauces for either pasta or potato bakes. If they're tomato based sauces and you get the extra tenner then you could get some cheap mince in and make a bolognaise with the sauce and spaghetti.

    You also have the ingredients for either pancake batter or yourkshire pud batter. You could do a veggi toad in the hole with the peas, carrots and onions? Or pancakes rolled with jam? Or even a couple of Victoria spounge cup-cakes (scale down the recipe to what you have).

    A mixed fried rice with peas and onions with seasoning would be great, but I wouldn't waste the eggs on it - I think you could do something better with the eggs.

    I would get the veg blanched and in the freezer now, you don't want to turn round in 6 days and find you have mouldy veggies - same with the bread.

    I make bread and butter pudding the following way:
    Butter the bread,(put jam or marmalade on it too if you like) Cut diagonally. Layer it in an ovenproof dish with some dried fruit (optional) and some suger. Mix one egg and some milk up, puor over. (You could use the tins of custard!)
    Bung in the oven till the custard is set and the bread is brown. Serve.

    Hi,

    I am looking for dinner suggestions - I feel that most days now we are eating too much processed food and want to try and go back to more fresh meat etc. On work days I find time is an issue, so I was hoping for some suggestions on quick, easy meals that I can prepare after work (with not alot of preparation involved as I have a toddler going through a very clingy stage at present) and that dont cost the earth!

    Any advice/tips will be gratefully received.

  • I posted something similar a week or so ago. In our case (myself and my two year old) we were stuck in a sandwich rut!
    I've since been making a little extra on our evening meal so there is enough leftovers to feed us for lunch the next day, whenever possible.
    So far we have had hm sweets and sour chicken, lasagne, cottage pie, chicken pie.

    On days where there is no leftovers we are having soups both tinned and hm, depending on what state of affairs my veg drawer is in, jacket potato with cheese and beans or tuna and salad cream and eggs (scrambles, boiled or poached) with toast
