When I lived in Spain almost every bar, and most homes cooked tripe -
Clean well and simmer in salted wated (add a few drops of vinegar) for a couple of hours - then cut into strips of 1 x 2 cm.
Seperately saute onions with garlic and celery and when softened add a tin of chopped tomato and whatever herbs you like - add tripe and cook for a further hour or so. By this time it should be tender. Lots of my friends adore it this way - but although I know how to cook it, tripe is about the only food I really don't like at all.
As for cooked in milk

MWDog has a cushier life than the Fleago dogs and they would like to move in with MWDog :rotfl: They just get theirs raw!
As an aside, donkey's years ago when I was at school the science teacher had the lights of a cow to show us how the lungs inflated etc. At the end of the class he asked who had a dog. I did, so the lights were wrapped up in newspaper and I proudly carried this haul off home, where my Mum cheerfully cooked them up and they were served to the dogWaste not, want not after all!
I bet nowadays there are rules against giving children the innards of a beast to take home for the dog :rolleyes:

Sorry but the best recipe for tripe is "Nail the Tripe to a stout board, season well then bury the both of then in the Garden for at least two weeks" After that excavate the board and tripe - Eat the board, I cannot stand Tripe, makes me sick to think about it.

I am a dedicated moneysaver but I would rather go into Boots tomorrow and pay full price for Time Delay than eat tripe .......urghhhhh....had it once as a child (we were very poor!) the memory will be with me forever. I will not eat it
but good luck to you! (surely Liver is a better option ??!)

i hear on farming today that scotland is trying to bring back tripe...
When i was small there used to be a whole tripe market in my town,
but now no one seems to eat it...
I have never tried to cook tripe but fancy the challenge....
any suggestions?

Having been fed it when I was little (in those days you had a choice eat it or go hungry)I personally would wrap it tightly in clingfilm and newspaper and put it in the deepest dustbin I could find the furthest away from where I lived.
Disgusting stuff I wouldn't even inflict on my worst enemy.But different strokes for different folks I guess0
