    Morning Mr Skint,

    I can't stand the stuff myself, but I did a quick google and found these recipes.

    Traditional tripe and onions

    Baked tripe

    My mothers version ...

    (Stewed) Tripe

    1-1 1/2 tripe, 1/2 pint milk, 1 onion, 1oz butter, 1 teasp flour, pinch nutmeg, salt and pepper.

    Wash and dry the tripe, cut into small pieces. Put in a pan with the milk and add enough water to cover the tripe well.
    Add the sliced onion (some parsley is liked) and simmer for 3/4 hr.
    Mix the butter and flour together adn stir it in. Season with s&p and nutmeg.
    Simmer for an hour more and serve very hot.

  • melt a knob of buter in a pan, add sliced carrots and some sliced onion and fry til brown. Turn them into a casserole dish. Rinse the pan out with a little stock and then pour that all into the casserole dish.pour about 1pint of stock and half pint of cheap white wine into the casserole dish. add salt and pepper, and add tripe cut inti small ( approx 2 inch square ) pieces.
    cover tightly and cook slowly over a low heat or in a low oven till tender.

    I've never seen tripe for sale in the past few years, how did you get your hands on that?

  • Ask your butcher to get some for you. He may not stock it automatically, as there's such a low demand these days ... but he can certainly get some from his supplier
    Warning ..... I'm a peri-menopausal axe-wielding maniac ;)

    Local butchers sell it, but usually sell out very early, apparently lots of more mature people buy it! I was looking for some for the dog - found it in the pet shop frozen section in the end!

    Yeah the Unbleached green sh*te is vile I mean its just the dregs and only
    just only fit for dogs, on the other hand the limewashed white tripe is lovely,
    and as for being mature, I suppose 35 is grown up :rotfl:
