You can still get it in Chinese restaurants which serve dim sum. It's usually lightly braised with garlic, ginger, black beans and chilli ... sorry, I wasn't brave enough to try

As it is the inner lining of a cow's stomach the BSE scares kept it off the shelves for a while, plus, demand isn't as high as it once was anyway!
Just like any "offal", it is an acquired taste and something which just the thought of can give other's the "heebee geebies" :eek:

I've been given some tripe by a neighbur and i really don't know what to do with it, never eaten it since very young and mother cooked it
any ideas ?0 -
my granddad swears by simmering it in a pan just covered with milk, until its done. says its the best way to have it,

Right,i've never cooked it,but according to my cookbooks you should wash it well,then cover with cold water and bring to the boil.Strain and cut the tripe into strips.Put in a saucepan with onions,milk and water,bay leaf,salt and pepper and simmer for 2 hours.After it is cooked you should make a sauce with the cooking liquid.
My Italian friend says tripa(sp?) is very popular in northern Italy.Here it is cooked with lots of garlic and tomatoes,which,frankly sounds much nicer.

PS Ignore the dogs! My dad used to have it when the neighbours had it, as my Mum refused to cook it :rotfl: It was cooked in milk with onions and black pepper as suggested above.
